Background/Objectives: Conventional ketogenic diets, although effective for weight loss, often contain high total and saturated fat intake, which leads to increased low-density lipoprotein cholesterol (LDL-C). Thus, the Healthy Ketogenic Diet (HKD) was developed to address these concerns. It emphasizes calorie restriction, limiting net carbohydrate intake to 50 g per day, prioritizing unsaturated fats, and reducing saturated fat intake. However, adherence to the HKD remains a challenge in urban, time-constrained environments. Therefore, this pilot randomized controlled trial aimed to investigate the effects of Healthy Ketogenic Diet Ready-To-Eat (HKD-RTE) meals (provided for the first month only) versus HKD alone on weight loss and metabolic parameters among overweight adults. Methods: Multi-ethnic Asian adults (n = 50) with a body mass index (BMI) ≥ 27.5 kg/m2 were randomized into the HKD-RTE group (n = 24) and the HKD group (n = 26). Both groups followed the HKD for six months, with the HKD-RTE group receiving HKD-RTE meals during the first month. Five in-person workshops and mobile health coaching through the Nutritionist Buddy Keto app helped to facilitate dietary adherence. The primary outcome was the change in body weight at 6 months. Linear regression was performed on the change from baseline for each continuous outcome, adjusting for demographics and relevant covariates. Logistic regression was performed on binary weight loss ≥ 5%, adjusting for demographics and relevant covariates. Results: In the HKD group, participants’ adherence to the 50 g net carbohydrate target was 15 days, while that in the HKD-RTE group was 19 days over a period of 30 days. Participants’ adherence to calorie targets was 21 days in the HKD group and 23 days in the HKD-RTE. The average compliance with the HKD-RTE meals provided in the HKD-RTE group was 55%. The HKD-RTE group experienced a greater percentage weight loss at 1 month (−4.8 ± 3.0% vs. −1.8 ± 6.2%), although this was not statistically significant. This trend continued up to 6 months, with the HKD-RTE group showing a greater percentage weight reduction (−8.6 ± 6.8% vs. −3.9 ± 8.6%; p = 0.092). At 6 months, the HKD-RTE group had a greater reduction in total cholesterol (−0.54 ± 0.76 mmol/L vs. −0.05 ± 0.56 mmol/L; p = 0.283) and LDL-C (−0.43 ± 0.67 mmol/L vs. −0.03 ± 0.52 mmol/L; p = 0.374) compared to the HKD group. Additionally, the HKD-RTE group exhibited greater reductions in systolic blood pressure (−8.3 ± 9.7 mmHg vs. −5.3 ± 11.0 mmHg), diastolic blood pressure (−7.7 ± 8.8 mmHg vs. −2.0 ± 7.0 mmHg), and HbA1c (−0.3 ± 0.5% vs. −0.1 ± 0.4%) than the HKD group (not statistically significant for any). Conclusions: Both HKD-RTE and HKD led to weight loss and improved metabolic profiles. The HKD-RTE group tended to show more favorable outcomes. Short-term HKD-RTE meal provision may enhance initial weight loss, with sustained long-term effects. Full article

Antimicrobial Resistance (AMR), i.e., the evolution of microbes to become resistant to chemicals used to control them, is a global public health concern that can make bacterial diseases untreatable. Inputs including antibiotics, metals, and biocides can create an environment in the agrifood chain that selects for AMR. Consumption of food represents a potential exposure route to AMR microbes and AMR genes (ARGs), which may be present in viable bacteria or on free DNA. Ready-to-eat (RTE) foods are of particular interest because they are eaten without further cooking, so AMR bacteria or ARGs that are present may be consumed intact. They also represent varied production systems (fresh produce, cooked meat, dairy, etc.). An evidence gap exists regarding the diversity and consumption of ARGs in RTE food, which this study begins to address. We sampled 1001 RTE products at retail sale in the UK, in proportion to their consumption by the UK population, using National Diet and Nutrition Survey data. Bacterial DNA content of sample extracts was assessed by 16S metabarcoding, and 256 samples were selected for metagenomic sequencing for identification of ARGs based on consumption and likely bacterial DNA content. A total of 477 unique ARGs were identified in the samples, including ARGs that may be involved in resistance to important antibiotics, such as colistin, fluoroquinolones, and carbapenems, although phenotypic AMR was not measured. Based on the incidence of ARGs in food types, ARGs are estimated to be present in a high proportion of average diets. ARGs were detected on almost all RTE food types tested (48 of 52), and some efflux pump genes are consumed in 97% of UK diets. Full article

With increasing popularity of food delivery services, the microbial safety of transported meals should be ensured. An effect of the type of a meal (cooked rice; mashed potatoes; mushroom sauce), inner primary packaging (sugarcane bagasse [SB] tray; polypropylene [PP] tray), secondary container (polyester/polyethylene foam/aluminum foil [PPA] bag; PP box) on the time interval of the internal hot ready-to-eat (RTE) meal temperature decrease to the value critical for Bacillus cereus growth (40 °C) was tested during a simulated delivery; in aliquot samples of the same meals, B. cereus growth was quantified presuming a natural contamination of the meals. Type of a meal had no effect on the tested time interval (p > 0.05). Packaging a meal in the PP tray as compared to the SB tray and inserting primary trays into the PP box instead of PPA bag delayed (p < 0.05) the internal meal temperature decrease by 50 and 15 min, respectively. Average B. cereus counts in the naturally contaminated meals after the four-hour culturing at 40 °C was 2.99 log CFU·g−1. It was concluded that a hot RTE meal delivered up to four hours under the tested conditions is not likely to facilitate B. cereus growth above unacceptable levels. Full article

Tetragonia tetragonioides, or New Zealand spinach, is a widespread halophyte native to eastern Asia, Australia, and New Zealand, and naturalized in some Mediterranean regions. This underutilized vegetable is consumed for its leaves, raw or cooked. For the first time, we investigated the feasibility of using whole baby plants (including stems and leaves) as raw material for ready-to-eat (RTE) vegetable production. Our study assessed Tetragonia’s suitability for hydroponic cultivation over two cycles (autumn–winter and spring). We investigated the impact of increasing nutrient rates (only water, half-strength, and full-strength nutrient solutions) and plant densities (365, 497, and 615 plants m−2 in the first trial and 615 and 947 plants m−2 in the second) on baby plant production. We also analyzed the plants’ morphological and biochemical characteristics, and their viability for cold storage (21 days at 4 °C) as a minimally processed product. Tetragonia adapted well to hydroponic cultivation across both growing periods. Nevertheless, climatic conditions, plant density, and nutrient supply significantly influenced plant growth, yield, nutritional quality, and post-harvest storage. The highest plant density combined with the full-strength nutrient solution resulted in the highest yield, especially during spring (1.8 kg m−2), and favorable nutritional characteristics (β-carotene, Vitamin C, Fe, Cu, Mn, and Zn). Furthermore, Tetragonia baby plants proved suitable for minimal processing, maintaining good quality retention for a minimum of 14 days, thus resulting in a viable option for the RTE vegetable market. Narrative review synthesizes the most current literature on the SARS-CoV-2 XEC variant, focusing on its genomic evolution, immune evasion characteristics, epidemiological dynamics, and public health implications. To achieve this, we conducted a structured search of the literature of peer-reviewed articles, preprints, and official surveillance data from 2023 to early 2025, prioritizing virological, clinical, and immunological reports related to XEC and its parent lineages. Defined by the distinctive spike protein mutations, T22N and Q493E, XEC exhibits modest reductions in neutralization in vitro, although current evidence suggests that mRNA booster vaccines, including those targeting JN.1 and KP.2, retain cross-protective efficacy against symptomatic and severe disease. The XEC strain of SARS-CoV-2 has drawn particular attention due to its increasing prevalence in multiple regions and its potential to displace other Omicron subvariants, although direct evidence of enhanced replicative fitness is currently lacking. Preliminary analyses also indicated that glycosylation changes at the N-terminal domain enhance infectivity and immunological evasion, which is expected to underpin the increasing prevalence of XEC. The XEC variant, while still emerging, is marked by a unique recombination pattern and a set of spike protein mutations (T22N and Q493E) that collectively demonstrate increased immune evasion potential and epidemiological expansion across Europe and North America. Current evidence does not conclusively associate XEC with greater disease severity, although additional research is required to determine its clinical relevance. Key knowledge gaps include the precise role of recombination events in XEC evolution and the duration of cross-protective T-cell responses. New research priorities include genomic surveillance in undersampled regions, updated vaccine formulations against novel spike epitopes, and long-term longitudinal studies to monitor post-acute sequelae. These efforts can be augmented by computational modeling and the One Health approach, which combines human and veterinary sciences. Recent computational findings (GISAID, 2024) point to the potential of XEC for further mutations in under-surveilled reservoirs, enhancing containment challenges and risks. Addressing the potential risks associated with the XEC variant is expected to benefit from interdisciplinary coordination, particularly in regions where genomic surveillance indicates a measurable increase in prevalence. Antimicrobial resistance (AMR) poses a growing threat to global health, and its spread through the food chain is gaining increasing attention. While AMR in food of animal origin has been extensively studied, less is known about its prevalence in plant-based foods, particularly fresh and ready-to-eat (RTE) vegetables. This study investigated the occurrence of antimicrobial-resistant bacteria in fresh and RTE vegetables. Isolates were subjected to antimicrobial susceptibility testing and molecular analyses for the characterization of antimicrobial resistance genes (ARGs). A significant proportion of samples were found to harbor antimicrobial-resistant bacteria, including multidrug-resistant strains. Several ARGs, including those encoding extended-spectrum β-lactamases (ESBLs) and resistance to critically important antimicrobials, were detected. The findings point to environmental contamination—potentially originating from wastewater reuse and agricultural practices—as a likely contributor to AMR dissemination in vegetables. The presence of antimicrobial-resistant bacteria and ARGs in fresh produce raises concerns about food safety and public health. The current regulatory framework lacks specific criteria for monitoring AMR in vegetables, highlighting the urgent need for surveillance programs and risk mitigation strategies. This study contributes to a better understanding of AMR in the plant-based food sector and supports the implementation of a One Health approach to address this issue. Full article

Steak tartare is a ready-to-eat (RTE) meat product, prepared with finely chopped or ground raw beef, with a rich culinary history and increasing consumption trend in the last years. Yet, its microbiological safety and technological challenges remain largely under-investigated. This review analyses the regulations, the safety, and technological advances in steak tartare manufacturing, focusing on microbiological risks due to potential contamination by pathogens like Salmonella spp., Listeria monocytogenes, and Escherichia coli O157:H7. From this perspective, the outbreaks associated with the consumption of raw meat products have confirmed the importance of good hygiene practice and process control, currently based on the presence of nitrite in the formulation and accurate cold chain management. Recently, the EU regulations have set stricter limits for the use of nitrites and nitrates in meat products, and this evolution has increased the interest in natural alternatives. The scientific literature indicates that plant-based antimicrobials, high-pressure processing (HPP), and novel starter cultures can be promising tools to improve raw meat safety and shelf life. This review analyses the possible options for nitrite replacement, which might involve combined interventions with natural antimicrobials, starter cultures, and packaging solutions. Future studies need to address the microbial behaviour and dynamics in nitrite-free formulations, including safety validation by challenge testing with foodborne pathogens. In this respect, steak tartare could be a model for innovation in the meat industry. However, considering the challenges that must be faced, collaboration across disciplines will be essential to meet regulatory constraints and consumer expectations while ensuring product quality and safety. Apple scab, caused by Venturia inaequalis, remains a major challenge for apple production in Morocco, where disease management heavily depends on fungicide applications. However, increasing reports of resistance have raised concerns about the long-term efficacy of commonly used products and the economic sustainability of apple orchards. In this study, we evaluated the sensitivity of five V. inaequalis isolates from the Fes-Meknes region, a key apple-producing area in Morocco, to three fungicides: difenoconazole, trifloxystrobin, and thiophanate-methyl. The identity of the isolates was confirmed based on both morphological characteristics and by molecular analysis of the ITS region. In vitro and in vivo assays revealed significant differences in isolate responses. Difenoconazole consistently showed the highest efficacy, with EC50 values ranging from 0.05 to 1.46 µg/mL, and preventive applications reducing disease severity by up to 85.8% at 10 µg/mL. In contrast, trifloxystrobin and thiophanate-methyl exhibited much higher EC50 values (2.94–29.62 µg/mL and 14.84–1237.20 µg/mL, respectively), indicating widespread resistance, particularly to thiophanate-methyl, whose curative and preventive efficacy rarely exceeded 44%. Preventive treatments were significantly more effective than curative applications for all fungicides tested. These findings highlight the urgent need to revise apple scab management strategies in Morocco, including the rotation of fungicides with different modes of action and the integration of non-chemical approaches. Broader sensitivity monitoring and the use of molecular diagnostics are recommended to better inform sustainable disease control programs. Full article

The apple tree (Malus domestica), a member of the Rosaceae family, holds significant economic value but faces postharvest challenges, like blue mold caused by Penicillium expansum and gray mold caused by Botrytis cinerea. While synthetic fungicides are widely used, their limitations highlight the need for sustainable alternatives. This study explores the antifungal properties of extracts from Celtis australis, Olea europea var. sylvestris, Chamaerops humilis, and Asparagus albus against these pathogens. In vitro tests assessed mycelial growth inhibition, whereas in vivo trials consisted of measurement of weight loss, firmness, total soluble solids, titratable acidity, and maturity index. Moreover, the phytochemical traits of the extracts were determined using the Folin–Ciocalteu method and HPLC. The results revealed notable antifungal activity, particularly for Celtis australis extract at a concentration of 300 g L−1, which led to significant mycelial growth inhibition (61% for P. expansum and 41% for B. cinerea), a reduction in diseases’ severity (39% and 50%), and a notable decrease in diseases’ incidence (43% and 48%), respectively. Phytochemical analysis reflected the presence of phenols and flavonoids in the tested extracts. Importantly, the natural treatments helped preserve the apples’ quality during storage. Molecular docking studies further revealed that major compounds in Celtis australis extract inhibit the 14α-demethylase enzyme, a key target in fungal sterols biosynthesis. Full article

This study introduces a farm-to-fork quantitative risk assessment (QRA) model for invasive listeriosis from ready-to-eat diced cantaloupe. The modular model comprises seven stages—preharvest (soil and irrigation contamination), harvest (cross-contamination and survival), pre-processing (brushing), processing (flume tank washing, dicing and equipment cross-contamination), lot testing, cold-chain transport and retail growth, and consumer storage/handling. Each stage employs stochastic functions to simulate microbial prevalence and concentration changes (growth, inactivation, removal, partitioning, cross-contamination) using published data. In a reference scenario—good agricultural practices (soil barriers, no preharvest irrigation), hygienic processing and proper cold storage—the model predicts low lot- and pack-level contamination, with few packs >10 CFU/g and most servings below detection; the mean risk per serving is very low. “What-if” analyses highlight critical control points: the absence of soil barriers with preharvest irrigation can increase the risk by 10,000-fold; flume tank water contamination has a greater impact than harvest-stage cross-contamination; and poor consumer storage can raise the risk by up to 500-fold. This flexible QRA framework enables regulators and industry to evaluate and optimize interventions—from improved agricultural measures to targeted sampling plans and consumer guidance—to mitigate listeriosis risk from RTE diced cantaloupe. The global consumption of fresh and ready-to-eat (RTE) fruits and vegetables has surged due to increasing awareness of their nutritional benefits. However, this trend has been accompanied by a rise in foodborne illness outbreaks linked to microbial contamination. This narrative review synthesizes current knowledge on the prevalence and diversity of foodborne pathogens in fresh produce, including bacterial, viral, and fungal agents. It critically evaluates both conventional and emerging detection methods, ranging from culture-based techniques and immunoassays to advanced molecular diagnostics, biosensors, flow cytometry (FC), and hyperspectral imaging (HSI). Additionally, this review discusses cutting-edge control strategies, such as natural antifungal agents, essential oils, biocontrol methods, and non-thermal technologies like cold plasma and UV-C treatment. Emphasis is placed on sampling methodologies, sustainability, One Health perspectives, and regulatory considerations. By highlighting recent technological advances and their limitations, this review aims to support the development of integrated, effective, and safe microbial control approaches for the fresh produce supply chain. Despite ongoing concerns about electromagnetic interference affecting cardiac implantable electronic devices (CIEDs) in the electrical industry workplaces, no study has experimentally assessed induced voltages in CIEDs under exposure to power-frequency magnetic fields. This study addresses this gap by quantifying such interference using a dedicated experimental setup to reproduce high intensity magnetic fields and to measure voltages induced on CIEDs under exposure. A thorough analysis was carried out in comparison with formula-based and simulation approaches applied in previous studies. The induced voltages on CIEDs were measured across varying configurations, including sensing mode, implantation method, exposure frequency, and magnetic field orientation. Our findings reveal the induced voltage levels under exposure from a statistical perspective and highlight correlations between susceptibility and the impact factors, with unipolar configurations and left pectoral implants exhibiting the highest susceptibility. This work provides insights into electromagnetic interference risks for CIED carriers and supports the development of individual protection strategies to enhance occupational safety. Full article

The synthesis of realistic fog in images is critical for applications such as autonomous navigation, augmented reality, and visual effects. Traditional methods based on Koschmieder’s law or GAN-based image translation typically assume homogeneous fog distributions and rely on oversimplified scattering models, limiting their physical realism. In this paper, we propose a physics-driven approach to fog synthesis by discretizing the Radiative Transfer Equation (RTE). Our method models spatially inhomogeneous fog and anisotropic multi-scattering, enabling the generation of structurally consistent and perceptually plausible fog effects. To evaluate performance, we construct a dataset of real-world foggy, cloudy, and sunny images and compare our results against both Koschmieder-based and GAN-based baselines. Experimental results show that our method achieves a lower Fréchet Inception Distance (10% vs. Koschmieder, 42% vs. CycleGAN) and a higher Pearson correlation (+4% and +21%, respectively), highlighting its superiority in both feature space and structural fidelity. These findings highlight the potential of RTE-based fog synthesis for physically consistent image augmentation under challenging visibility conditions. However, the method’s practical deployment may be constrained by high memory requirements due to tensor-based computations, which must be addressed for large-scale or real-time applications. Background/Objectives: This study explores the integration of wearable sensors and artificial intelligence (AI) for Human Activity Recognition (HAR) in the diagnosis and rehabilitation of Parkinson’s disease (PD). The objective was to develop a proof-of-concept model based on internal reproducibility, without external generalization, that is capable of distinguishing pathological movements from healthy ones while ensuring clinical relevance and patient safety. Methods: Nine subjects, including eight patients with Parkinson’s disease and one healthy control, were included. Motion data were collected using the Motigravity platform, which integrates inertial sensors in a controlled environment. The signals were automatically segmented into fixed-length windows, with poor-quality segments excluded through preprocessing. A hybrid CNN-LSTM (Convolutional Neural Networks—Long Short-Term Memory) model was trained to classify motion patterns, leveraging convolutional layers for spatial feature extraction and LSTM layers for temporal dependencies. The Motigravity system provided a controlled hypogravity environment for data collection and rehabilitation exercises. Results: The proposed CNN-LSTM model achieved a validation accuracy of 100%, demonstrating classification potential. The Motigravity system contributed to improved data reliability and ensured patient safety. Despite increasing class imbalance in extended experiments, the model consistently maintained perfect accuracy, suggesting strong generalizability after external validation to overcome the limitations. Conclusions: Integrating AI and wearable sensors has significant potential to improve the HAR-based classification of movement impairments and guide rehabilitation strategies in PD. While challenges such as dataset size remain, expanding real-world validation and enhancing automated segmentation could further improve clinical impact. Future research should explore larger cohorts, extend the model to other neurodegenerative diseases, and evaluate its integration into clinical rehabilitation workflows. Full article

Mycotoxins are a large family of secondary metabolites produced by filamentous fungi species that may be present in food following fungal growth. Mycotoxins are found in a variety of crops, including wheat, millet, maize, sorghum, peanut, soybean, and their by-products. In recent years, the consumption of ready-to-eat food (RTE) has increased exponentially. An increasing number of consumers have elected to purchase and consume ready-made meals, a choice that allows for a more expedient and convenient dining experience. The aim of this review was to investigate recent literature to find a link between the consumption of mycotoxin-contaminated RTEs, modern detection methods (artificial intelligence), and potential health risks to consumers. The regular exchange of information between the Member States and the European Community (EU) concerning the monitoring of contaminants and undesirable chemical substances, and the subsequent communication of the findings to the EFSA, provides the foundation for the evolution of the legislative framework with the objective of enhancing food safety and reducing the risks associated with the consumption of food. It is imperative that governments, the food industry, and the scientific community collaborate to reduce this risk and ensure consumer safety. Full article
