Cover Story: Fresh-cut potatoes are increasingly valued for their convenience and versatility, but minimal processing accelerates physiological and biochemical changes that can rapidly compromise product quality and shelf life. Peeling and cutting trigger enzymatic browning, moisture loss, texture deterioration, metabolic changes, and microbial spoilage. This review provides a comprehensive overview of the main mechanisms responsible for quality deterioration and examines conventional and emerging preservation strategies, including temperature and atmosphere control, anti-browning treatments, edible coatings, and emerging non-thermal technologies. These approaches offer promising opportunities to maintain quality and safety while extending the shelf life of minimally processed potato products. View this paper
