Foods, Volume 15, Issue 17

2026 September-1 - 222 articles

Cover Story: The growing demand for sustainable, non-animal, low-allergenic protein alternatives has driven research into microalgae. This review focuses on three species—Arthrospira platensis (Spirulina), Chlorella vulgaris, and Tetraselmis chuii—examining cell wall structures, protein content, and amino acid profiles. Physical, enzymatic, and chemical extraction methods are critically discussed, alongside purification techniques for improving protein purity and quality. Protein characterization methods are addressed for their relevance to food applications. Applications of microalgal biomass and protein extracts in food and beverages are evaluated, considering functionality, safety, and regulatory aspects. Further research is needed to optimize extraction and processing, support integration into mainstream food production, and improve efficiency. View this paper
