Cover Story: The valorization of food industry by-products is a promising strategy for developing natural additives to increase food quality. This study examined the efficiency of tomato processing industry waste (TPIW), which is a significant agro-industrial by-product, in enhancing the oxidative stability of three common edible vegetable seed oils (i.e., sunflower, soybean, and corn oils) under accelerated storage conditions. The results of this study confirm that TPIW could assist shelf-life prolongation of edible vegetable oils and promote a circular economy strategy by valorizing food by-products as a viable alternative to synthetic antioxidants. View this paper
