Cover Story: The current understanding of how modified atmospheric packaging (MAP) affects the metabolite profiles of cooked beef is limited. This study aimed to assess the effects of different packaging methods on the color and metabolite composition of both normal-pH and atypical dark-cutting beef. A total of 129 metabolite features were identified in this study. Serine and tryptophan were over-abundant in cooked atypical dark-cutting beef compared to raw atypical samples. This study suggests that packaging conditions change metabolite profiles, which can influence cooked metabolites. View this paper
