Food Additives: Novel Sources, Characteristics and Applications
This special issue belongs to the section "Food Packaging and Preservation".
Special Issue Information
Dear Colleagues,
The growing consumer demand for natural and minimally processed foods has driven the search for novel food additives from diverse biological sources. This Special Issue aims to compile cutting-edge research on the discovery, characterization, and application of innovative additives derived from plants, microorganisms, and other natural origins. We invite contributions that explore the antimicrobial and antioxidant mechanisms of action, the physicochemical stability of active compounds, and their efficacy in extending the shelf life of various food products while maintaining quality and safety. Studies addressing the synergistic effects of combined preservation technologies, the impact of novel preservatives on sensory and nutritional properties, and the regulatory and commercial aspects of their implementation are particularly welcome. This collection seeks to bridge the gap between fundamental research and practical applications, providing a comprehensive platform for researchers and industry professionals to advance the development of next-generation food preservation solutions.
