Cover Story: Rice is a crop with major economic and nutritional importance worldwide. Its quality characteristics, including grain structure, aroma, and texture, are highly valued in food production and consumption. Rice provides carbohydrates, proteins, fibre, lipids, vitamins, and minerals, and is widely used in infant and dietary foods. Despite relatively low rice consumption in the European Union compared with wheat and potatoes, rice accounts for the highest number of notifications in the Rapid Alert System for Food and Feed. Reported hazards include pesticide residues, mycotoxins, genetically modified organisms, and heavy metals. Growing rice consumption in Europe is associated with changing dietary patterns and population ageing as rice is part of Mediterranean diets and is increasingly used in functional foods and dietary products. View this paper
