Food Chemistry and Bioactive Compounds in Relation to Health, 3rd Edition

Dear Colleagues,

Taking the aging population into consideration, various diseases related to oxidative stress have become increasingly common. Today, bioactive compounds are among the best substances to achieve health benefits and prevent disease. Several epidemiological studies indicate that the use or ingestion of food or ingredients rich in bioactive compounds with antioxidant activity has a positive and beneficial effect on human health and decreases the risk of contracting many diseases related to stress, metabolic, and functional decline.

Topics included in this Special Issue include, but are not limited to, the following:

1. The extraction, purification, identification, and structural elucidation of new bioactive compounds from various sources.
2. The characterization of newly developed bioactive ingredients that can be used in the food, cosmeceutical, and pharmaceutical industries, with a strong focus on the beneficial and functional effects they exert on human health.
3. The investigation of metabolic pathways and the bioactivities of molecules or active ingredients, including new metabolomics approaches.

We invite esteemed colleagues to submit both original research and review articles that cover the topics mentioned above.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process.
