Dear Colleagues,
From ancient times, natural products have played a crucial role in nutrition, either as preservatives or as important ingredients. At present, advancements in analytical research tools have strengthened our insights into natural products and their role in food. As part of this Special Issue, we focus on bioactive natural products and warmly welcome contributions addressing their analysis in food, particularly those that focus on bioactive lipid constituents in milk and secoiridoids and aldehydic bioactive natural compounds in oil.
We welcome contributions covering the multitude of methods used to facilitate analytical research on bioactive natural products in food: from non-invasive spectroscopic techniques and methods to -omics profiling in numerous food matrices to spectrometric techniques and methods.

Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
