Cover Story: Cow’s milk was collected in Dalaba city, Guinea. Raw and heated calcium-enriched milk were prepared by adding calcium chloride (CaCl2) to raw milk at a concentration of 10 mM, followed by agitation at 150 rpm for 2 min. Aliquots were transferred into Pyrex tubes. For heated samples, the tubes were immersed in a water bath at 65 °C for 5 min and then rapidly cooled in ice to halt thermal effects. Samples were equilibrated at 30 °C for 1 h prior to acidification. Gelation was induced by the addition of GDL (2.3%, w/w). Coagulation was monitored over 180 min using fluorescence, infrared spectroscopy, and scanning electron microscopy, among other techniques. PCA applied to MIR datasets revealed a clear differentiation between raw and heated milk, with or without CaCl2. These results were confirmed through fluorescence and SEM analyses. View this paper
