Dear Colleagues,
In the face of global population growth, food insecurity, and environmental pressures, edible insects are emerging as a sustainable and nutrient-rich alternative to traditional animal-based protein sources. This Special Issue invites submissions exploring edible insects from diverse nutritional, environmental, economic, and cultural perspectives. We encourage original research articles, systematic reviews, case studies, and opinion papers addressing topics such as the nutritional analysis of edible insects, health implications, food safety, and regulation, sustainable production and farming practices, consumer acceptance, innovative processing and culinary uses, and the socioeconomic potential of insect-based foods. Contributions that offer interdisciplinary insights and highlight the benefits, challenges, and future opportunities associated with incorporating edible insects into human diets are particularly welcome.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
