Dear Colleagues,
Bioactive phytochemicals, which are derived from plants, play a crucial role in human health due to their nutritional and therapeutic properties. These compounds, including polyphenols, flavonoids, alkaloids, and terpenoids, exhibit antioxidant, anti-inflammatory, antimicrobial, and anticancer activities. However, despite their benefits, the safety, bioavailability, and mechanisms of action of many phytochemicals remain understudied. This Special Issue aims to gather cutting-edge research on the nutritional value, biological effects, and safety assessment of phytochemicals in food, contributing to a better understanding of their potential in functional foods, nutraceuticals, and dietary supplements.
This Special Issue invites original research and review articles that explore the following:
- The nutritional and health-promoting effects of bioactive phytochemicals.
- Mechanistic insights into their biological activities.
- Extraction, characterization, and stability of phytochemicals in food matrices.
- Bioavailability and metabolism of dietary phytochemicals.
- Toxicological and safety evaluations.
- Innovative applications in functional foods, nutraceuticals, or food preservation.
- Omics approaches to study phytochemical interactions.
- Sustainable sourcing and green extraction techniques for bioactive compounds.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
