Dear Colleagues,
Contemporary trends in animal nutrition are changing dynamically under the influence of factors such as health concerns, production ethics, sustainable development and technological innovations. Animal products play a key role in the human diet, providing high-quality protein, vitamins and minerals. However, changes in consumer awareness and the development of science and technology are leading to modifications in the consumption patterns of these products. Health, ecological and ethical issues are becoming increasingly important, which affects the methods of obtaining and processing animal products. Although animal products provide key nutrients, their consumption should be conscious and adjusted to current nutritional recommendations. The development of alternative methods of producing animal food is a response to challenges related to ethics, the environment and public health. These technologies have the potential to significantly change the food industry, but their widespread implementation requires further research and social acceptance. Actions for sustainable development in the animal breeding sector focus on reducing greenhouse gas emissions, optimising the use of natural resources and implementing more efficient and ecological methods of food production. An ethical approach to nutrition encompasses not only animal welfare, but also aspects related to the transparency of product origin, legal regulations and the development of alternative protein sources. Conscious consumer choices are crucial to shaping the future of animal food production. This special issue aims to collect research and review articles containing various new aspects regarding trends in animal food, which are evolving towards healthier, more sustainable and ethical choices, while technological developments and ecological and health awareness of society shape the future of production and consumption of these products in the nutritional context. Potential topics include, but are not limited to: Studies comparing the absorption of nutrients from animal food with other types of food; Factors determining the consumption of animal food; Health aspects of the consumption of animal products; Ethical approach to nutrition; Sustainability and ecology in nutrition; Bioactive compounds of animal origin. I would like to invite you to contribute papers addressing the aforementioned related aspects for this Special Issue on Modern Trends in Nutrition of Animal Products.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. All manuscripts are thoroughly refereed through a single-blind peer-review process. Nutrients is an international peer-reviewed open access semimonthly journal published by MDPI.
