Granada, Spain
Dear Colleagues,
On behalf of the local organizing committee, it is both an honor and a pleasure to invite scientists from around the world to the 20th Food Colloids Conference, taking place in Granada, Spain, on March 22nd–26th, 2026.
This conference serves as a global platform for experts from academia and industry to share their latest research and insights into the fascinating and complex world of food colloids. The 20th edition will highlight the latest trends in colloidal food systems while continuing to explore the timeless principles of physical chemistry in the field. A key focus this year will be on sustainable food colloids such as those from insects, plants, and microbial-based approaches, including their multiscale characterization and applicability in food delivery systems. Additionally, the conference will broaden its scope to include AI methods and digital technologies in food colloids fostering interdisciplinarity in food research.
The Food Colloids Conference has a rich history, dating back to its inception in Leeds in 1986. Since then, it has continued to unite scientists from diverse disciplines, all dedicated to advancing the physical chemistry of colloidal food systems. This 20th edition aims to analyze the state of the art in food colloids, commemorate the achievements, and look into the challenges facing the future generation of foods.
We are delighted to host the conference in Granada, the city of Alhambra and tapas. The University of Granada, with a history spanning nearly 500 years, will welcome participants to its Faculty of Sciences, conveniently located within walking distance of the city center.
On behalf of both the organizing committee and the international steering committee, we eagerly anticipate welcoming you to Granada in March 2026 for an inspiring and productive exchange in food colloid science!
We look forward to seeing you there.
Warm regards,
Prof. Julia Maldonado-Valderrama

Madrid, Spain
Dear Colleagues,
On behalf of the local organizing committee, it is both an honor and a great pleasure to invite scientists from across the globe to the 25th International Symposium Surfactants in Solution (SIS) 2026, which will take place in Madrid, Spain, from June 14th to 19th, 2026.
The SIS Symposium has long been recognized as a premier international forum for advancing the fundamental and applied science of surfactants, colloids, interfaces, foams, and emulsions. The 2026 edition will be especially significant, as it marks the 50th Anniversary of this influential conference series, first established in 1976. This milestone edition will not only celebrate five decades of scientific progress but also highlight new and emerging directions in surfactant science.
SIS 2026 will feature cutting-edge research on topics such as self-assembly and molecular design of surfactants, interfacial rheology, micro- and nanostructured systems, foams and emulsions, responsive and active interfaces, green and sustainable formulations, and advances in experimental, analytical, and simulation methodologies. In line with current scientific developments, the conference will also emphasize data-driven approaches, machine learning, and multiscale modeling in colloids and interface science, supporting greater interdisciplinarity and innovation.
Since its inaugural meeting in Albany in 1976, the SIS Symposium has traveled across continents, fostering a vibrant and inclusive community dedicated to understanding and applying the physics and chemistry of interfaces. As we gather in Madrid for the 50th Anniversary, SIS 2026 aims to reflect on this remarkable legacy, showcase the latest breakthroughs, and explore the scientific and technological challenges that will shape the next decades of surfactant and interfacial research.
We are delighted to host this commemorative edition at the Faculty of Chemical Sciences of the Universidad Complutense de Madrid. Madrid, renowned for its history, culture, gastronomy, and warm hospitality, provides an exceptional setting for stimulating scientific exchange and memorable social interactions.
On behalf of both the organizing committee and the international advisory committee, we warmly invite you to join us in Madrid in June 2026 for an inspiring and productive celebration of surfactant and interfacial science at SIS 2026.
We look forward to welcoming you.
