Dear Colleagues,
In recent years, the dynamic development of analytical, biotechnological, and diagnostic technologies has significantly expanded our knowledge of food quality and safety. At the same time, global challenges such as climate change, intensified food production, the development of new protein sources, and growing consumer expectations have created a need for further, in-depth research in these areas. This Special Issue—"New Insights into Food Quality and Safety”—will present the latest achievements, trends, and innovative solutions that can contribute to improving the quality, stability, and safety of food products.
We invite submissions of articles presenting both original research results and reviews of the current literature. We particularly welcome papers on the following topics:
- New strategies for producing safe food;
- Safe enrichment of the nutritional value of products and searching for new food flavors;
- Strategies for reducing the risk of undesirable compounds being present during production and storage;
- The impact of new production technologies, including those for shelf-life extension, on food safety;
- Modern techniques for quality analysis and monitoring food freshness and authenticity;
- Innovative IT tools in quality and safety management.
This Special Issue will provide a platform for the exchange of cutting-edge knowledge between scientists, industry experts, and representatives of the food sector. By contributing to this issue, authors will have the opportunity to present research that significantly supports the development of modern and safe food systems.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Applied Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
