Dear Colleagues,
Food safety risk assessment is the central component of risk analysis and provides a scientific basis for risk management decisions on measures that may be needed to protect human health. It takes into account all available relevant scientific data and identifies any uncertainties in the knowledge base. In food safety risk assessment, the sources of contaminants in food that are often discussed are physical, chemical, and biological.
This Special Issue on “Safety and Risk Assessment of Food Products” seeks high-quality works focusing on scientific and technical information and critical analysis for food products. Topics include but are not limited to:
- Biological contaminants in food microorganisms, mycotoxins, plant toxins,;
- Physical contaminants in food radiation, plastic particles, etc.;
- Chemical substances in food—food additives, residues (g.,pesticide residues and veterinary drug), environmental contaminants (e.g., metals, persistent organic pollutants), food process contaminants (e.g., PAHs, acrylamide, 3-MPCD), contaminants derived from food packaging, etc.;
- Original data on relevant topics (e.g., exposure and hazard assessment);
- Quantitative risk assessment;
- Comparative risk assessment;
- Total diet study;
- Epidemiology of foodborne diseases;
- Risk perception/communication;
- Risk management;
- Benefit–risk analysis.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Processes is an international peer-reviewed open access monthly journal published by MDPI.
