Dear Colleagues,
Since the 1990s, food chemistry has advanced with a growing focus on secondary metabolites and bioactive compounds in foods. This shift has expanded our understanding of food, recognizing it not only as a source of calories but as a functional ingredient with potential health benefits. The increasing recognition of these bioactive molecules has led to new approaches in food science and nutrition, emphasizing their role in human health and wellness.
This Special Issue explores the critical role of Chromatographic Analysis Techniques in the Food Industry, focusing on advanced methods for identifying and characterizing bioactive compounds in foods and plants. Chromatography provides precise tools for the qualitative and quantitative analysis of these compounds, supporting food safety, traceability, and the development of nutraceuticals and functional foods. In the context of rapid cultural, technological, and climate changes, this issue aims to stimulate dialogue on how chromatographic techniques can enhance food analysis and contribute to healthier food systems.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Processes is an international peer-reviewed open access monthly journal published by MDPI.
