Special Issue Information

Dear Colleagues,

Over the past few decades, the importance of nutritional (proteins, carbohydrates, fatty acids, vitamins, and minerals) and non-nutritional (polyphenols, antioxidants, etc.) compounds in promoting human health and reducing the risk of many pathologies has increased. The ability of different bioactive compounds to modulate metabolic processes has become evident. However, further investigations are required to expand knowledge on the real functions of bioactive compounds; as such, bioaccessibility and bioavailability studies are needed to create new functional foods and food supplements that possess specific healthy properties. New analytical methods are needed to monitor changes in the concentration and chemical structure of bioactive compounds from their extraction and isolation to the final ingredient/functional food product. This will support the effective performance of bioavailability studies.

The aim of this Special Issue is to collect the most recent and significant contributions on the innovative and green approaches applied to extract, purify, and analyze bioactive compounds and the metabolites generated when functional food or food supplements are consumed. Furthermore, research on the most recent and innovative application of bioactive compounds is encouraged. Particular emphasis will be placed on the use of bioactive compounds as ingredients for novel foods and the development of analytical methods for bioaccessibility studies.

The Special Issue welcomes the submission of original scientific articles, short communications, and reviews.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.

Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
