Dear Colleagues,
The ultimate goal of the horticultural industry is to satisfy consumers’ various requirements. Thus, high-quality horticultural fruits should have a positive taste, smell, and appearance, with nutrients and healthy benefits for consumers, which are determined by their pigments, volatiles, flavonoids, and other metabolite profiles. Metabolomics serves as a critical approach for understanding the dynamics of metabolite changes during fruit development, while also providing technical support for improving and maintaining fruit quality. The Special Issue includes, but is not limited to, the analysis of metabolomic changes during fruit development, methodologies in metabolomics, correlation analysis between quality traits, and studies on synergistic regulation mechanisms.
Recently, a number of publications have focused both on the flavor and biochemistry profiles of horticultural fruits, extending researchers’ attention from omics science to the intersection of the metabolites and quality. This Special Issue will present recent advances in metabolic profiling during horticultural fruit development.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Metabolites is an international peer-reviewed open access monthly journal published by MDPI.
