Special Issue Information

Dear Colleagues,

Natural fundamental components like polysaccharides are found in plants such as lotus root, blueberry, areca nut, and hawthorn. Although most natural components are non-absorbable, they provide significant health benefits, including immunomodulatory, anti-inflammatory, anti-tumor, liver-protecting, and growth-regulating effects. For instance, Astragalus polysaccharide has been extensively used to modulate intestinal health and immune function. These natural plant polysaccharides typically possess large molecular weights and complex structures, with their biological activities closely linked to their structural features. Therefore, understanding the structural characteristics of natural plant polysaccharides is of great interest. Moreover, it is crucial to elucidate the mechanisms through which these polysaccharides exert their health benefits. This Special Issue aims to compile original research on the structural properties and health benefits of natural polysaccharides found in food, to obtain a deeper understanding of their functional role.
