To improve the postharvest preservation of cherry tomatoes and combat pathogenic, both bacterial and fungal contamination (particularly Alternaria alternata), a novel biodegradable coating was developed based on a water-in-water (W/W) Pickering emulsion system. The emulsion was stabilized by L. plantarum (Lactobacillus plantarum), with maltodextrin (MD) as the dispersed phase and hydroxypropyl methylcellulose (HPMC) as the continuous phase. Characterization of emulsions at varying concentrations revealed that the optimized W/W-PL^8 film exhibited superior stability, smooth morphology, and low water vapor permeability (WVP = 220.437 g/(m2·24 h)), making it a promising candidate for fruit and vegetable preservation. Furthermore, the coating demonstrated strong antioxidant activity, with scavenging rates of 58.99% (ABTS) and 94.23% (DPPH), along with potent antimicrobial effects, showing inhibition rates of 12.8% against Escherichia coli and 23.7% against Staphylococcus aureus. Applied to cherry tomatoes, the W/W-PL^8 coating significantly reduced respiration rates, minimized decay incidence, and maintained nutritional quality during storage. Remarkably, the coating successfully controlled Alternaria alternata contamination, enhancing the storage duration of cherry tomatoes. Produce supply chains play a critical role in ensuring fruits and vegetables reach consumers efficiently, affordably, and at optimal freshness. In recent decades, hub-and-spoke network models have emerged as valuable tools for optimizing sustainable cold food supply chains. Traditional optimization efforts typically focus on removing inefficiencies, minimizing lead times, refining inventory management, strengthening supplier relationships, and leveraging technological advancements for better visibility and control. However, the majority of models rely on deterministic approaches that overlook the inherent uncertainties of crop yields, which are further intensified by climate variability. Rising atmospheric CO2 concentrations, along with shifting temperature patterns and extreme weather events, have a substantial effect on crop productivity and availability. Such uncertainties can prompt distributors to seek alternative sources, increasing costs due to supply chain reconfiguration. This research introduces a stochastic hub-and-spoke network optimization model specifically designed to minimize transportation expenses by determining optimal distribution routes that explicitly account for climate variability effects on crop yields. A use case involving a cold food supply chain (CFSC) was carried out using several weather scenarios based on climate models and real soil data for California. Strawberries were selected as a representative crop, given California’s leading role in strawberry production. Simulation results show that scenarios characterized by increased rainfall during growing seasons result in increased yields, allowing distributors to reduce transportation costs by sourcing from nearby farms. Conversely, scenarios with reduced rainfall and lower yields require sourcing from more distant locations, thereby increasing transportation costs. Nonetheless, supply chain configurations may vary depending on the choice of climate models or weather prediction sources, highlighting the importance of regularly updating scenario inputs to ensure robust planning. This tool aids decision-making by planning climate-resilient supply chains, enhancing preparedness and responsiveness to future climate-related disruptions. Full article

Flavonols, representing a subclass of flavonoids, are an important group of polyphenols. Their activity is associated with a number of beneficial properties, including hepatoprotective, senolytic, neuroprotective, and anticancer properties. They are found abundantly in many fruits, vegetables, and plant products, but flavonols’ chemistry and structural properties result in their low bioavailability in vivo. In recent years, more and more studies have emerged that aim to increase the therapeutic potential of compounds belonging to this group, including by developing innovative nanoformulations. The present work focuses on the various steps, such as chemical analysis of the compounds, preformulation studies using drug delivery systems, preclinical studies, and finally clinical trials. Each of these elements is important not only for the innovation and efficacy of the therapy but most importantly for the patient’s health. There are also a limited number of studies assessing the population concentration of flavonols in the blood; therefore, this review presents an up-to-date survey of the most recent developments, using the most important compounds from the flavonol group. Vegetables and fruits grown in urban areas pose a potential threat to human health due to contamination with heavy metals (HMs). This study aimed to identify and quantify the concentrations of heavy metals (Fe, Mn, Zn, Cu, Pb, Cd) in tomatoes, leafy vegetables, and fruits collected from 16 allotment gardens (AGs) located in Warsaw. A total of 112 samples were analyzed (72 vegetable and 40 fruit samples). Vegetables from AGs accumulated significantly higher levels of HMs than fruits. Leafy vegetables, particularly those cultivated near high-traffic roads, exhibited markedly elevated levels of Pb, Cd, and Zn compared to those grown in peripheral areas. Lead concentrations exceeded permissible limits by six to twelve times, cadmium by one to thirteen times, and zinc by 0.7 to 2.4 times. Due to high levels of Pb and Cd, tomatoes should not be cultivated in urban environments. Regardless of location, only trace amounts of HMs were detected in fruits. The greatest health risk is associated with the consumption of leafy vegetables. Lettuce should be considered an indicator plant for assessing environmental contamination. The obtained Hazard Index (HI) values indicate that only the tested fruits are safe for consumption. Meanwhile, the values of the Hazard Quotient (HQ) indicate no health risk associated with the consumption of lettuce, cherries, and red currants. Among the analyzed elements, Pb showed a higher potential health risk than other metals. This study emphasizes the need for continuous monitoring of HM levels in urban soils and the establishment of baseline values for public health purposes. Remediation of contaminated soils and the implementation of safer agricultural practices are recommended to reduce the exposure of urban populations to the risks associated with the consumption of contaminated produce. In addition, the safety of fruits and vegetables grown in urban areas is influenced by the location of the AGs and the level of industrialization of the agglomeration. Therefore, the safety assessment of plant products derived from AGs should be monitored on a continuous basis, especially in vegetables. Full article

Cold storage is widely used for the postharvest preservation of fruits and vegetables; however, okra, as a tropical vegetable, is susceptible to chilling injury under low-temperature storage conditions, leading to quality deterioration, reduced nutritional value, and significant economic losses. Nitric oxide (NO), as an important signaling molecule, plays a crucial role in the postharvest preservation of fruits and vegetables. To investigate the effects of different concentrations of nitric oxide on the postharvest quality of okra under cold storage, fresh okra pods were treated with sodium nitroprusside (SNP), a commonly used NO donor, at concentrations of 0 (control), 0.5 (T1), 1.0 (T2), 1.5 (T3), and 2.0 mmol·L−1 (T4). The results showed that low-concentration NO treatment (T1) significantly reduced weight loss, improved texture attributes including hardness, springiness, chewiness, resilience, and cohesiveness, and suppressed the increase in adhesiveness. T1 treatment also effectively inhibited excessive accumulation of cellulose and lignin, thereby maintaining tissue palatability and structural integrity. Additionally, T1 significantly delayed chlorophyll degradation, preserved higher levels of soluble sugars and proteins, and enhanced the activities of key antioxidant enzymes, including superoxide dismutase (SOD), peroxidase (POD), and catalase (CAT), contributing to improved oxidative stress resistance and membrane stability. In contrast, high-concentration NO treatments (T3 and T4) led to pronounced quality deterioration, characterized by accelerated membrane lipid peroxidation as evidenced by increased malondialdehyde (MDA) content and relative conductivity, and impaired antioxidant defense, resulting in rapid texture degradation, chlorophyll loss, nutrient depletion, and oxidative damage. These findings provide theoretical insights and practical guidance for the precise application of NO in extending shelf life and maintaining the postharvest quality of okra fruits. Full article

Fruits and vegetables are crucial components of a healthy diet, which are susceptible to pests. Therefore, the application of pesticides is a basic manner of crop chemical protection. The aim of this study was a comprehensive analysis of pesticide occurrence in 1114 samples of fruits and vegetables. A unified multi-analytical protocol was used composed of primary–secondary amine/graphitized carbon black/magnesium sulfate to purify samples with diversified profile of interfering substances. Moreover, the obtained analytical data were used to evaluate the critical acute health risk in subpopulations of children and adults within European limits criteria. Out of 550 pesticides analyzed, 38 and 69 compounds were noted in 58.6% of fruits and 44.2% of vegetables, respectively. Acetamiprid (14.1% of all detections) and captan (11.3%) occurred the most frequently in fruits, while pendimethalin (10.6%) and azoxystrobin (8.6%) occurred the most frequently in vegetables. A total of 28% of vegetable and 43% of fruit samples were multiresidues with up to 13 pesticides in dill, reaching a final concentration of 0.562 mg kg−1. Maximum residue level (MRL) was exceeded in 7.9% of fruits and 7.3% of vegetables, up to 7900% MRL for chlorpyrifos in dill (0.79 mg kg−1). Notably, 8 out of 38 pesticides found in fruits (21%; 1.2% for carbendazim) and 24 out of 69 compounds in vegetables (35%, 7.4% for chlorpyrifos) were not approved in the EU. Concentrations of pesticides exceeding MRL were used to assess acute health risk for children and adults. Moreover, the incidence of acute health risk was proved for children consuming parsnip with linuron (156%). In other cases, it was below 100%, indicating that Polish food is safe. The work provides reliable and representative scientific data on the contamination of fruits and vegetables with pesticides. It highlights the importance of legislative changes to avoid the occurrence of not approved pesticides in the EU, increasing food and health safety. Full article

The S100B protein, known for its role in the central and enteric nervous systems, has recently been identified in dietary sources such as milk, dairy products, fruits, and vegetables. Given its potential interaction with the gut microbiota, this study explores the relationship between dietary intake of S100B and microbiota biodiversity across different diets. A comprehensive study was conducted, estimating S100B concentrations in 13 dietary patterns recommended in different countries. This is the first study to provide a comparative estimation of S100B exposure from the diet and to explore its potential ecological and epidemiological relevance. The association between S100B levels and microbiota biodiversity was statistically analyzed, showing a direct correlation. Microbial diversity was assessed using the Shannon index, based on data extracted from studies reporting microbiota composition across dietary patterns. Additionally, the relative risk of Crohn’s disease was assessed in different populations to examine potential links between dietary patterns, S100B, and chronic disease prevention. A moderate positive correlation (R2 = 0.537) was found between S100B concentration and Shannon index, suggesting that diets higher in S100B (e.g., Mediterranean diet) were associated with higher microbial alpha-diversity. Furthermore, Western-style diets, with the lowest S100B levels, exhibited a higher relative risk for Crohn’s disease (R2 = 0.780). These findings highlight the potential role of dietary S100B content in modulating gut microbiota diversity and reducing chronic disease risk. Full article

Although it is one of the most important methods of fruit and vegetable preservation, pickling provides multiple interesting vistas for study, from the variety of the raw vegetal material and the composition of pickling media to the diversity of the microorganisms involved in the process or the quality of the final product. The purpose of this study is to investigate the effects of sodium chloride substitution with potassium or magnesium chloride on the pickling process of apples. Physical (mass, color, texture), chemical (dry matter, acidity, salinity, reducing sugars) and phytochemical parameters of the apples were analyzed during 35 days of fermentation, with a frequency of 7 days. The results show a decrease in dry matter from 14.94 ± 0.25% for all the samples and a continuous increase of lactic acid concentration to a maximum of 0.248 ± 0.032 g lactic acid/100 g product for the magnesium samples. At the same time, the phytochemical profile is enhanced, while the texture becomes softer (a decrease in firmness from 2.53 ± 0.08 N to 0.72 ± 0.02 N was registered for potassium samples). The main conclusion of the study is that sodium chloride could be successfully replaced by potassium or magnesium chloride in the fermentation process of apples. Full article

Ailanthus altissima (AA) is an invasive tree species rapidly spreading worldwide, colonizing both urban and agricultural or forestry environments. This three-year study aimed to assess its effects on the growth and yield traits of the Koroneiki olive cultivar under co-cultivation in pots, combined with two irrigation regimes, full and deficit irrigation (60% of full). Within each irrigation regime, olive trees were grown either in the presence or absence (control) of AA. The trial evaluated several parameters, including vegetative growth, yield traits, and oil quality characteristics. Co-cultivation with AA had no significant impact on tree growth after three years, though it significantly reduced oil content per fruit. Antioxidant capacity of the oil improved under deficit irrigation, while AA presence did not significantly affect it, except for an increase in o-diphenol concentration. Neither the fatty acid profile nor squalene levels were significantly influenced by either treatment. Fruit weight and color were primarily affected by deficit irrigation. During storage, olive oil quality declined significantly, with pre-harvest treatments (presence or absence of AA and full or deficit irrigation regime) playing a critical role in modulating several quality parameters. In conclusion, the presence of AA near olive trees did not substantially affect the key quality indices of the olive oil, which remained within the criteria for classification as extra virgin. Research suggests that monosodium glutamate (MSG), known for its association with umami taste, may influence appetite. This event-related potential (ERP) study with source localization examined the effects of umami taste on visual food cue reactivity. A total of 88 females (mean age: 26 years) were randomly assigned to one of two groups: one tasted an MSG solution, while the other tasted water, before viewing images from four food categories with varying umami concentrations (meat dishes, vegetables, fruits, sweets). The participants rated their desire to eat the depicted foods, and ERP late positivity (P300; late positive potential: LPP) was analyzed. The results showed that MSG did not influence reported appetite. However, the MSG group exhibited reduced parietal P300/LPP amplitudes across all food categories. These group differences in food cue processing could be traced back to sources in the left occipital gyrus and fusiform gyrus indicating an alteration in motivated attention due to umami taste. Background/Objectives: Ellagic acid (EA) is a polyphenol found in several fruits and vegetables, including pomegranate, nuts and berries. It exhibits significant health benefits, mainly cardio- and vaso-protective; indeed, EA protects the myocardium against infarction and inhibits cardiac fibrosis. These beneficial effects may be, at least in part, promoted by calcium release from and uptake by the sarcoplasmic reticulum, which are crucial events for cardiac relaxation and contraction. Regardless, the exact mechanism is currently unclear. Methods: A deeper investigation of the role of EA in cardiac contractility and the underlying mechanism has been carried out by using an ex vivo model of isolated and perfused rat heart. Results and Discussion: EA perfusion (100 nM–10 µM) did not influence the coronary flow (CF), suggesting the absence of a vasoactivity, but significantly increased contractility parameters (LVDP and dP/dt). Interestingly, a more marked effect of EA on LVDP and dP/dt values was observed when it was perfused in the presence of AngII. Cyclopiazonic acid (CA) and red ruthenium (RR), specific antagonists of SERCA and RyRs, respectively, were used to explore the contribution of EA when the intracellular calcium handling was altered. In the presence of CA, EA, perfused at increasing concentrations, showed a very modest positive inotropism (significant only at 1 µM). Instead, RR, which significantly compromised all functional parameters, completely masked the effects of EA; furthermore, a marked reduction in CF and a dramatic impact on the positive inotropism occurred. Conclusions: These results demonstrate the positive inotropism of EA on isolated and perfused hearts and suggest that the RyRs may be a main target through which EA plays its effects, since inhibition with RR almost completely blocks the positive inotropism. Abstract
The evolution of global agriculture encourages the extensive use of pesticides although significant concerns regarding their impact on human health and the environment must be considered. The evolution of global agriculture encourages the extensive use of pesticides although significant concerns regarding their impact on human health and the environment must be considered. The present paper highlights the presence and concentrations of various pesticide residues in fruits and vegetables available on Romanian markets. A total of 74 pesticide compounds authorized for agricultural use were identified and quantified in 620 randomly selected samples spanning a wide range of horticultural products by employing the QuEChERS extraction method and liquid chromatography–mass spectrometry (LC-MS/MS). The most often detected pesticides comprised boscalid and azoxystrobin, present in 42% and 37% of apple and strawberry samples, respectively, with mean concentrations of 0.12 mg/kg and 0.09 mg/kg. In cucumbers and tomatoes, difenoconazole and acetamiprid were predominant, detected in 35% and 40% of samples, with average residue amounts of 0.08 mg/kg and 0.07 mg/kg, respectively. Statistical analysis, achieved with Python 3.13.2, the pandas library (alongside descriptive statistics), and ANOVA, revealed significant variations in residue levels based on the product type and geographic origin. Boscalid and azoxystrobin were commonly encountered in apples and strawberries while difenoconazole and acetamiprid predominated in cucumbers and tomatoes. Even though the majority of pesticide residues conformed to EU maximum residue limits (MRLs), about 6% of samples, generally from imported products, displayed some residue concentrations approaching critical thresholds, with the highest exceedance observed for chlorpyrifos and lambda-cyhalothrin at concentrations of up to 0.25 mg/kg. This research provides a comprehensive overview of pesticide residues prevalence in Romania’s fresh product supply while, at the same time, supporting consumer awareness initiatives and evidencing the critical demand for continuous monitoring and strengthened regulatory frameworks for food safety. Active packaging films have been an essential component in food material research to ensure the safe and efficient preservation of food, fruit, and vegetables. The shelf life of fruits and vegetables may likely be extended by covering them with high-performance nanofiber (NF) films. The selection of materials for active packaging film has been a critical factor in preventing food materials from environmental contaminants (microbes) and extending the shelf life. This study aims to develop NF-based materials for cherry tomatoes to prevent fungal and bacterial damage. Bioactive NFs were produced through an electrospinning process using tannic acid (TA) within a polyvinylidene fluoride (PVDF) template. These NFs offer a sustainable alternative to synthetic packaging for food preservation. TA was incorporated into the PVDF matrix at varying concentrations (0.4 to 1.2%). Key parameters, including moisture content, thickness, opacity, water-contact angle, and thermal shrinkage, were assessed. The physicochemical results indicate that the TA NFs are suitable for further shelf-life performance evaluations. The antifungal and antibiofilm activity of the NFs was tested, showing that the TA1.2 in the PVDF matrix was more effective than other concentrations. Shelf-life tests demonstrated that cherry tomatoes covered with TA1.2 NFs showed no surface changes for up to 4 days. Importantly, the NFs were confirmed to be non-toxic to normal cells, as evidenced by tests on mouse 3T3-L1 fibroblast cells. In summary, we have developed bioactive NFs composed of TA in a PVDF matrix that enhance the shelf life of cherry tomatoes by preventing bacterial and fungal attacks on the fruit surfaces. The recycling of post-consumer plastics for food-contact applications is subject to stringent regulatory requirements, particularly with regard to the removal of potentially harmful non-intentionally added substances (NIAS). While polyethylene terephthalate (PET) recycling processes are already approved by the European Food Safety Authority (EFSA), there is a lack of guidance for other polymers like polystyrene (PS). This study aims to provide a scientific basis for assessing the decontamination efficiency required for recycled post-consumer PS in food-contact applications. As one of the first studies to propose a framework for PS decontamination assessment based on EFSA food-consumption data and conservative diffusion modeling, it contributes to filling this regulatory gap. First, European food-consumption data were analyzed to identify critical scenarios of the age-group-dependent intake of PS-packaged food. Based on this, a conservative migration model was applied using a one-dimensional diffusion simulation to determine the maximum allowable initial concentrations of NIAS in PS. The calculated values were then compared with published reference contamination levels to calculate the required cleaning efficiency. The combination of food-consumption values and the migration process showed that trays for fruits and vegetables are the most critical food-contact application for post-consumer PS recycling. The most stringent assumptions resulted in necessary decontamination efficiencies ranging from 92% for the smallest molecule, toluene (92.14 g/mol), to 42% for the largest molecule, methyl stearate (298.50 g/mol). The results provide a methodological basis for regulatory assessments and offer practical guidance for designing safe recycling processes, thereby supporting the circular use of PS in food packaging and building the basis for future regulatory assessments of other polymers, in line with the European Union Plastics Strategy and circular economy objectives. Widespread drought conditions have increasingly affected agricultural productivity, requiring the exploration of alternative approaches for improving crop tolerance, yield and quality, since plants adopt many physiological strategies to cope with challenging environments. This study evaluated the effects of a vegetal-derived protein hydrolysate (PH), applied via foliar spray or root drench at a concentration of 3 mL L−1, on tomato plants (n = 96) under well-watered and drought-stressed conditions over a 136-day greenhouse experiment. Overall, sub-optimal irrigation significantly decreased plant dry biomass (−55.3%) and fruit production (−68.8% marketable yield), and enhanced fruit quality in terms of sugar concentration and antioxidant levels. PH treatments, regardless of the application method, did not notably influence above-ground dry biomass, yield, or fruit quality, suggesting that the intensity of drought might have limited PH effectiveness. Metabolomic analysis showed higher concentrations of stress- and quality-related metabolites in tomato fruits from plants under stress, with PH not exerting significant metabolic changes in the fruits. These findings revealed the diminished effectiveness of PHs under severe drought conditions, suggesting that drought stress level needs to be taken into consideration for optimizing biostimulant efficacy.
