Anthocyanins, the natural plant pigments gracing numerous fruits and vegetables, are captivating the realm of nutrition. Their remarkable antioxidant properties are the driving force behind their potential to alleviate oxidative stress and inflammation, offering the tantalizing prospect of reducing the risk of chronic diseases through dietary integration. In the realm of oncology, anthocyanins exhibit their prowess, inhibiting tumor growth, instigating apoptosis in cancerous cells, and curtailing angiogenesis. Their emerging role as natural agents for cancer prevention and therapy invites exploration. In the context of food preservation, advanced techniques in extraction, processing, encapsulation, and storage have assumed the role of guardians of anthocyanin stability and bioavailability, ensuring that these bioactive compounds maintain their health benefits in a myriad of dietary applications.
