Dear Colleagues,
The global marine biorefining industry is confronted with numerous challenges. While pursuing sustainable development, it is imperative to adopt efficient, green, and high-value processing technologies, as well as comprehensive utilization strategies, to fully exploit Antarctic krill resources. This Special Issue invites the submission of cutting-edge research and innovative methods to advance the processing, modification, and functional assessment of krill-derived products, with a focus on the applications and functional advantages of high-value krill products, especially krill oil.
Topics of interest include, but are not limited to, the following: advanced krill processing technologies, high-value utilization of krill by-products, safety assessment of krill-based products, and sustainable management of Antarctic krill resources. We particularly welcome submissions that detail the extraction and application methods of krill oil, as well as its unique functional benefits—including phospholipid-bound omega-3 fatty acids, astaxanthin, and other bioactive components—which have demonstrated outstanding performance in cardiovascular health, anti-inflammatory, antioxidant activity, and nutritional enhancement.
With this Special Issue, we aim to outline the current status and future development trends of advanced processing and high-value utilization technologies in Antarctic krill scientific research, establishing a knowledge-sharing platform to ensure the health of marine ecosystems.
We look forward to receiving your contributions to this Special Issue and to jointly advancing the field of Antarctic krill processing and comprehensive utilization.

All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
