Dear Colleagues,
The transition toward sustainable food systems, the urgent need to reduce waste, and the growing demand for functional and health-promoting ingredients are driving renewed scientific and technological interest in the edible oils sector. In this context, advances in extraction and refining processes, improved understanding of oil composition, and innovative strategies for by-product valorisation are playing a key role in enhancing both sustainability and product quality across the agri-food chain.
This Special Issue seeks to publish high-quality research and review articles addressing a broad range of edible oils (e.g., vegetable, seed, and specialty oils) and related by-products (such as oilseed meals, pomace, press cakes, and refining residues). Contributions may focus on their chemical and functional composition, innovative and sustainable processing approaches (including novel extraction techniques, mild or green refining, and stabilization strategies), and their nutritional, technological, and applicative relevance in the food, nutraceutical, and cosmetic sectors.
This Special Issue particularly welcomes studies employing advanced analytical methodologies, low-impact and resource-efficient processing technologies, and integrated strategies for the valorisation of oil by-products within a circular economy framework. The unique added value of this Special Issue lies in its explicit integration of processing technologies, chemical composition, functionality, and end-use applications, providing a comprehensive perspective that bridges fundamental research, technological innovation, and industrial relevance.
By bringing together contributions from analytical chemistry, food and process engineering, nutrition, functional foods, and sustainability assessment, this Special Issue aims to strengthen the multidisciplinary dialogue in the field of edible oils and their derivatives. Overall, it seeks to offer a forward-looking scientific reference that complements existing literature and supports the development of high-value, safe, sustainable, and functionally enhanced oils and by-products. We warmly invite researchers from academia and industry to contribute their latest findings to this Special Issue.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
