Dear Colleagues,
This Special Issue, ‘The Role of Antioxidants in Food Safety and Quality’, aims to gather high-quality contributions addressing the use of antioxidants in preserving food quality and ensuring food safety across a wide range of food systems. It will cover topics such as natural and synthetic antioxidants, the oxidative stability of food matrices, the prevention of lipid, protein, and carbohydrate oxidation, the mitigation of toxic oxidation products, innovative extraction and encapsulation technologies and their applications in active and intelligent packaging, advanced analytical methods, sustainability and by-product valorisation, and regulatory and consumer-related aspects. The Special Issue is targeted at food scientists, food chemists, technologists, safety experts, and industry professionals, as well as early-career researchers working at the interface of food quality, safety, and innovation. By integrating fundamental research with applied and industrial perspectives, this Special Issue is expected to provide a comprehensive and timely overview of current advances, stimulate interdisciplinary dialogue, and support the development of safer, higher-quality, and more sustainable food products, thereby contributing to future research directions and evidence-based decision-making in the agri-food sector.

Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Antioxidants is an international peer-reviewed open access monthly journal published by MDPI.
