Special Issue Information

Dear Colleagues,

In recent decades, innovative technologies in the field of food microbiology have developed rapidly. This has focussed the attention of food professionals on the development of non-thermal technologies that are environmentally friendly and safe. This Special Issue aims to highlight the synergy between advanced microbiological techniques, non-thermal technologies and other technologies to discover new solutions and methods for the sustainable production of food and fermented foods. In addition, it will explore the genetic and phenotypic characteristics of microorganisms, especially bacteria, yeasts and filamentous fungi, as well as new technologies that can impact food safety and quality and promise significant technological advances for sustainable food systems.

Manuscript Submission Information

Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Applied Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
