Hygiene, Volume 6, Issue 3

2026 September - 28 articles

Cover Story: Deeply rooted in Mexican food culture, “aguas frescas” are popular traditional beverages whose safety depends on far more than freshness and visual appeal. This study evaluated their microbiological quality and food hygiene practices across distinct market models in the Monterrey Metropolitan Area, Nuevo León, Mexico. While establishments with structured quality systems achieved full compliance with regulatory limits, fecal coliforms and Escherichia coli were detected in a substantial proportion of samples from other market types. These findings emphasize that robust temperature control, ongoing hygiene training, and a strong food safety culture are vital to mitigate foodborne hazards and safeguard public health. View this paper
