The aim of the study was to evaluate the use of sunflower and sesame oilseed press cakes, which are by-products of oil extraction, as functional ingredients in cookie production. The quality characteristics of these by-products were assessed, including water activity, pH, total phenolic content, and antioxidant activity, and HPLC analysis of the phenolic compounds was performed. Subsequently, cookies were prepared by replacing wheat flour with 30% or 50% press cake. The addition of sunflower press cake significantly increased the total phenolic content (up to 8.6 mg GAE/g dm) and antioxidant activity (up to 75.9%) in the cookies, whereas adding sesame press cake showed a less pronounced effect, reaching 0.91 g GAE/g dm and 8.9% for total phenolic content and antioxidant activity, respectively. HPLC analysis indicated that chlorogenic acid and its derivatives dominated in sunflower-enriched cookies, while sesame samples contained lignans such as sesamol and sesamin. Our study shows that 50% substitution improves the health-promoting properties of cookies and does not differ significantly from the 30% level in consumer sensory evaluations. These findings support the use of sunflower and sesame press cakes as valuable ingredients in food applications. This represents an important step toward developing healthier and more nutritious food products while supporting the principles of the circular economy through the upcycling of valuable raw materials. Açaí (Euterpe oleracea) seeds account for up to 95% of the fruit’s weight and are commonly discarded during pulp processing. Roasted açaí seed extract (RASE) has recently emerged as a caffeine-free coffee substitute, although its composition and functionality remain underexplored. This study characterized commercial açaí seed powder and evaluated the effect of temperature on the recovery of total phenolic content (TPC) in the aqueous extract using a Central Composite Rotatable Design (CCRD). An intermediate extraction condition (6.0 ± 0.5 g 100 mL−1 at 100 °C) was selected, resulting in 21.78 mg GAE/g TPC, 36.23 mg QE/g total flavonoids, and notable antioxidant capacity (FRAP: 183.33 µmol TE/g; DPPH: 23.06 mg TE/g; ABTS: 51.63 mg TE/g; ORAC: 31.46 µmol TE/g). Proton Nuclear Magnetic Resonance (1H NMR) analysis suggested the presence of amino acids, carbohydrates, and organic acids. During in vitro digestion, TPC decreased from 54.31 to 17.48 mg GAE 100 mL−1 when RASE was combined with goat milk. However, higher bioaccessibility was observed with skimmed (33%) and semi-skimmed (35%) cow milk. These findings highlight RASE as a phenolic-rich, antioxidant beverage with functional stability when prepared with boiling water. This is the first study to report the phytochemical profile of RASE and its interactions with different milk types, supporting its potential as a coffee alternative. Full article

Due to its lightweight and superior adsorption properties, carbon foam is frequently employed for the removal of heavy metal pollutants from aqueous solutions. In this study, a novel modified carbon foam (M-CF) was successfully synthesized for the effective removal of Pb2+ and Cd2+ from water. The synthesis involved partially substituting phenol with the liquefaction product of bamboo powder, followed by modification with a silane coupling agent (KH560) and foaming with n-hexane-loaded activated carbon (H/AC). The prepared carbon foam was comprehensively characterized, and its adsorption performance and mechanism for Pb2+ and Cd2+ in aqueous solution were investigated. The results showed that M-CF possessed a uniform and well-developed spherical pore structure and demonstrated excellent removal capacity for Cd2+ and Pb2+. The adsorption process conformed to the Sips isotherm model and the pseudo-second-order kinetic equation, with maximum adsorption capacities of 22.15 mg·g−1 and 61.59 mg·g−1 for Cd2+ and Pb2+, respectively. Mechanistic analysis revealed that the removal of Cd2+ and Pb2+ was a result of the synergistic effect of physisorption and chemisorption, accompanied by complexation. Furthermore, precipitates formed during the adsorption process were found to be mainly composed of hydroxides, carbonates, and PbS. This research demonstrates the efficacy of carbon foam prepared from bamboo powder waste as a partial phenol substitute for the efficient removal of Pb2+ and Cd2+ from water, thus expanding the preparation pathways for novel heavy metal adsorption materials. The agri-food sector faces the challenge of valorizing by-products and reducing waste. The frozen pumpkin industry generates substantial amounts of by-products rich in nutritional value, especially β-carotene. This study evaluates the nutritional and physical impact of incorporating pumpkin pulp flour (dehydrated and freeze-dried) obtained from by-products into cracker formulation. Crackers were prepared by replacing 10% and 20% of wheat flour with pumpkin flour, assessing the effects based on drying method. Physical parameters (expansion, color, and texture parameters) were measured, in the dough and in the baked products. Furthermore, β-carotene content was analyzed by HPLC-DAD, antioxidant capacity was measured with DPPH, ABTS, and ORAC, and total phenolic content was evaluated with the Folin–Ciocalteu method. Proximate composition and mineral content were also analyzed. Additionally, a preliminary sensory evaluation was conducted with 50 untrained consumer judges to assess acceptability of external appearance, texture, and taste. The inclusion of pumpkin flour significantly increased β-carotene content (up to 2.36 mg/100 g), total phenolics, and antioxidant activity of the baked crackers. Proximate analysis showed a marked improvement in fiber content and a slight reduction in energy value compared to wheat flour. Mineral analysis revealed that pumpkin flours exhibited significantly higher levels of K, Ca, Mg, and P, with improved but not always statistically significant retention in the final crackers. Freeze-dried flour retained more bioactive compounds and enhanced color. However, it also increased cracker hardness, particularly with dehydrated flour. Only the 10% freeze-dried formulation showed mechanical properties similar to those of the control. Sensory analysis indicated that all formulations were positively accepted, with the 10% freeze-dried sample showing the best balance in consumer preference across all evaluated attributes. Frozen pumpkin by-products can be effectively valorized through their incorporation into bakery products such as crackers, enhancing their nutritional and functional profile. Freeze-drying better preserves antioxidants and β-carotene, while a 10% substitution offers a balance between nutritional enrichment and technological performance and sensory acceptability. Background: Among the alkaloids from Cassia siamea, cassiarin A has outstanding antiprotozoal activity, but structure–activity relationships for this chemotype were only poorly understood until now. Methods: We worked out efficient approaches to hitherto underexplored analogs (12 examples) on three synthesis routes which mainly comprised variations in the methyl groups at C-2 and C-5. The new compounds were tested for antiprotozoal and cytotoxic activities. Results: Introduction of a (substituted) benzene ring at C-2 led to a significant enhancement of activity against Plasmodium falciparum, while modifications of the methyl group at C-5 and the phenolic group had detrimental effects. Two of the 2-phenyl analogs further showed a resistance index comparable to the one of the reference drug chloroquine. Although the novel derivatives did not show hemolytic effects, investigation on human endothelial (HUVEC) cells at relevant concentrations indicated strong cytotoxic effects on human cells. Conclusions: Systematic structure modifications of cassiarin A led to a significant enhancement of antiplasmodial activity, but the observed strong cytotoxicity to human cells renders this library of cassiarin A derivatives inadequate for drug development. Public concerns about the health risks of synthetic antioxidants have prompted the meat industry to look for natural alternatives rich in phenols with strong antioxidant properties. This study investigates the use of blackcurrant (BCP), lingonberry (LP), and sour cherry (SCP) powders as natural substitutes for synthetic nitrites in reformulating two clean-label salami types, smoked and cooked and smoked and scalded, with a focus on their effects on oxidative stability during processing and refrigerated storage (4 °C). Nitrite-free formulations were prepared with each fruit powder at three inclusion levels to provide total phenolic contents of 90, 200, and 300 mg gallic acid equivalents (GAE)/kg of processed meat. A nitrite-containing control (90 mg/kg) and an additive-free control were included for comparison. The phytochemical profiles of powders were characterized by total phenolic, flavonoid, monomeric anthocyanin contents, and L-ascorbic acid levels. Antioxidant activity was assessed via 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging and ferric reducing antioxidant power (FRAP) assays. Salami samples were analyzed for proximate composition, and lipid oxidation was monitored at 0, 15, and 30 days of storage using peroxide value, inhibition of oxidation, p-anisidine value, TOTOX, and thiobarbituric acid value. Fruit powders demonstrated dose- and type-dependent inhibition of primary and secondary lipid oxidation, enhancing oxidative stability during processing and storage. After 30 days of storage, oxidation markers in fruit-enriched salami remained below recommended thresholds, confirming effective control of lipid oxidation. The inhibitory potential followed the order BCP > LP > SCP, consistent with antioxidant profiles as reflected by DPPH and FRAP values. BCP at 300 mg GAE/kg showed a stronger lipid oxidation inhibition than sodium nitrite. Promising improvements in lipid oxidation resistance were also observed with LP at 300 mg GAE/kg and BCP at 200 mg GAE/kg. These findings highlight the potential of fruit-derived antioxidants to support the development of more sustainable, value-added meat products without compromising quality. Full article

Functional flours, defined as flours enriched with health-promoting compounds such as phenolics, fibers, or proteins, are gaining attention as wheat-free alternatives due to the nutritional limitations of wheat flour. This study introduces a novel liquid chromatographic time-of-flight tandem mass spectrometric method (LC-QTOF-MS/MS) to characterize the phenolic profiles of functional flours from different origins and evaluate their potential as flour substitutes in food products. The proposed method was validated and the limits of quantification (LOQs) were calculated over the ranges 0.1–1.0 mg/kg. Calculated recoveries were as low as 82.4%. Repeatability and reproducibility were expressed as intra-day (n = 6) and inter-day (n = 4 × 3) measurements and were lower than 8.1 and 10.9%, respectively. Target and suspect screening findings underscore the potential of pulse flours as nutritionally enriched ingredients for functional food development. Full article

Invasive alien species are one of the main threats to global biodiversity, and pose significant management challenges in several areas outside their natural range. In southern Mediterranean Europe, the invasion of Acacia species is particularly severe and its control requires costly and often ineffective actions. The use of vermicompost derived from these species to replace peat-based substrates in horticulture offers a promising alternative to mitigate their economic and environmental impacts while enhancing the sustainability of their control. This study explored the potential of vermicompost produced from the fresh aboveground waste biomass (leaves + stems + flowers) of Acacia dealbata and Acacia melanoxylon (75:25 w/w), two of the most aggressive Acacia species in the Mediterranean, using Eisenia fetida over twelve weeks. In essence, this study aimed to evaluate the quality of the produced vermicompost and its suitability as a partial substitute for potting substrate in the production of cucumber (Cucumis sativus) seedlings for transplant. Four substrate mixtures containing 0%, 10%, 30%, and 50% of Acacia vermicompost (w/w), combined with commercial peat-based potting substrate and perlite (20%) were tested in polystyrene seedling trays. Seedling emergence, growth, and leaf biochemical parameters (photosynthetic pigments, phenolics, soluble sugars and starch, and total thiobarbituric acid-reactive substances—TBARSs) were evaluated. The results showed that the addition of Acacia vermicompost to the commercial substrate did not affect its germination but significantly enhanced seedling growth, particularly in mixtures containing 30% and 50% Acacia vermicompost. In addition, the absence of accumulation of TBARSs also reflected the superiority of these two treatments. These findings suggest that vermicompost derived from A. dealbata and A. melanoxylon biomass can be a viable peat-based substrate alternative for horticultural production, with the dual benefit of promoting sustainable agricultural practices and contributing to invasive species management. This review critically explores the pharmacological potential of four traditionally significant medicinal plants—Phoenix dactylifera, Solanum lycopersicum, Withania somnifera, and Trigonella foenum-graecum—with a specific focus on their antidiabetic, cardioprotective, and antimicrobial properties. In light of the escalating global burden of chronic metabolic diseases and the alarming rise in antimicrobial resistance, there is an urgent demand for alternative, sustainable therapeutic strategies. Drawing upon both ethnopharmacological evidence and contemporary biomedical research, this study identifies and characterizes the key bioactive constituents responsible for the observed therapeutic effects. These phytochemicals include flavonoids, phenolic acids, alkaloids, and saponins, which modulate metabolic pathways, exert antioxidative and anti-inflammatory effects, and inhibit microbial proliferation. A systematic literature search was conducted across PubMed, Web of Science, and Scopus databases, covering peer-reviewed articles published between 2000 and 2025. Inclusion criteria emphasized both in vitro and in vivo experimental models to provide a holistic understanding of molecular mechanisms and biological efficacy. Importantly, this review does not propose these plant extracts as direct substitutes for clinically established therapies but rather as potential complementary agents or sources of novel compounds for future drug development. This integrative approach underscores the relevance of traditional medicinal knowledge in guiding the discovery of plant-based therapeutics. It highlights these species as promising candidates for innovative health interventions in the context of modern biomedicine and global public health. Full article

Kinetics of Different Substituted Phenolic Compounds’ Aqueous OH Oxidation in Atmosphere

Atmospheric aqueous-phase reactions have been recognized as an important source of secondary organic aerosols (SOAs). However, the unclear reaction kinetics and mechanics hinder the in-depth understanding of the SOA sources and formation processes. This study selected ten different substituted phenolic compounds (termed as PhCs) emitted from biomass burning as precursors, to investigate the kinetics using OH oxidation reactions under simulated sunlight. The factors influencing reaction rates were examined, and the contribution of reactive oxygen species (ROS) was evaluated through quenching and kinetic analysis experiments. The results showed that the pseudo-first-order rate constants (kobs) for the OH oxidation of phenolic compounds ranged from 1.03 × 10−4 to 7.85 × 10−4 s−1 under simulated sunlight irradiation with an initial H2O2 concentration of 3 mM. Precursors with electron-donating groups (-OH, -OCH3, -CH3, etc.) exhibited higher electrophilic radical reactivity due to the enhanced electron density of the benzene ring, leading to higher reaction rates than those with electron-withdrawing groups (-NO2, -CHO, -COOH). At pH 2, the second-order reaction rate (kPhCs, OH) was lower than at pH 5. However, the kobs did not show dependence on pH. The presence of O2 facilitated substituted phenols’ photodecay. Inorganic salts and transition metal ions exhibited varying effects on reaction rates. Specifically, NO3 and Cu2+ promoted kPhCs, OH, Cl significantly enhanced the reaction at pH 2, while SO42− inhibited the reaction. The kPhCs, OH were determined to be in the range of 109~1010 L mol−1 s−1 via the bimolecular rate method, and a modest relationship with their oxidation potential was found. Additionally, multiple substituents can suppress the reactivity of phenolic compounds toward •OH based on Hammett plots. Quenching experiments revealed that •OH played a dominant role in phenolic compound degradation (exceeding 65%). Electron paramagnetic resonance confirmed the generation of singlet oxygen (1O2) in the system, and probe-based quantification further explored the concentrations of •OH and 1O2 in the system. Based on reaction rates and concentrations, the atmospheric aqueous-phase lifetimes of phenolic compounds were estimated, providing valuable insights for expanding atmospheric kinetic databases and understanding the chemical transformation and persistence of phenolic substances in the atmosphere. Catalytic hydrogenolysis of lignin to produce high-value monophenols has emerged as a pivotal strategy in modern biorefineries. In this study, we synthesized spherical nitrogen-doped porous carbon (SNCB) materials by using Al/Co-BTC as a precursor, introducing melamine as a supplementary carbon and nitrogen source, and activating the material with NaOH solution. The SNCB framework was decorated with Cu-Pd bimetallic nanoparticles, exhibiting outstanding catalytic activity in the hydrogenolytic depolymerization of organosolv lignin. The Cu-Pd@SNCB catalyst exhibited remarkable activity, attributed to the hierarchical porous structure of SNCB that facilitated metal nanoparticle dispersion and reactant accessibility. The synergistic effect between Cu as the reactive site for reactant adsorption and Pd as the reactive site for H2 adsorption enhanced the catalytic activity of the catalyst. Systematically optimized conditions (2 MPa H2, 270 °C, 3 h) yielded 43.02 wt% phenolic monomers, with 4-(3-hydroxypropyl)-2,6-dimethoxyphenol dominating the product profile at 46.3% selectivity. The catalyst and its reaction products were analyzed using advanced characterization techniques, including XPS, XRD, TEM, SEM, BET, GC-MS, GPC, 2D HSQC NMR, and FT-IR, to elucidate the reaction mechanism. The mechanism proceeds through: (1) nucleophilic substitution of the β-O-4 hydroxyl group by MeOH, followed by (2) simultaneous hydrogenolytic cleavage of Cβ-O and Cα-O bonds mediated by Cu-Pd@SNCB under H2 atmosphere, which selectively produces 4-(3-hydroxypropyl)-2,6-dimethoxyphenol and 4-propyl-2,6-dimethoxyphenol. This study compares the antioxidant properties and phytochemical profiles of three pairs of widely used medicinal plant species to their counterparts from Provence, France: Arnica montana with Pentanema montanum (formerly known as Inula montana), Helichrysum italicum with Helichrysum stoechas, and Satureja hortensis with Satureja montana. Phytochemical composition has been investigated using UHPLC-HRMS/MS and molecular networking, revealing chemical profiles dominated by phenylpropanoids and flavonoids, with lignans, sesquiterpene lactones, or polyketides aside. Well-plate DPPH/ABTS assays were used to evaluate the antioxidant activity of extracts, and post-column assays were used to identify antioxidant compounds. The three Provence species demonstrated comparable or superior antioxidant activities to their counterparts, primarily attributed to phenolic compounds such as mono- and di-caffeoylquinic acids, quercetagetin-7-O-glucoside, and myricetin acetylhexoside. These findings show the potential of Provence species to be substituted for some overharvested medicinal plants. This research supports biodiversity conservation while promoting the integration of these local species into pharmaceutical, nutraceutical, cosmetic, and food industries. Full article

The agricultural sector plays one of the pivotal roles in fulfilling the objectives set forth by the EU Green Deal. However, the extensive use of synthetic fertilizers has contributed to nutrient over-enrichment in aquatic ecosystems, promoting eutrophication due to excess nitrogen inputs from fertilizers. This phenomenon is a key driver of rapid and excessive algal blooms in rivers, lakes, and seas. In this study, three globally cultivated crop species—oilseed rape (Brassica napus L.), common wheat (Triticum aestivum L.), and pea (Pisum sativum L.)—were selected for experimental analysis, including the assessment of biochemical parameters such as proline content, lipid peroxidation levels, hydrogen peroxide production, total phenol content, and antioxidant activity, which were evaluated to determine the potential of phytoplankton biomass as a substitute for synthetic fertilizers. Various quantities of lyophilized phytoplankton biomass, collected from the Curonian Lagoon, a biologically productive and ecologically sensitive brackish water body in the southeastern Baltic region, were incorporated into the growth substrates of the studied plants. The findings indicate that utilizing excess phytoplankton biomass can serve not only as a plant growth biostimulant but also as a sustainable alternative to synthetic fertilizers, thereby contributing to improved water quality and more environmentally responsible agricultural practices. Nutritional and Antioxidant Enhancement of Pasta Enriched with Parota Flour (Enterolobium cyclocarpum): A Functional Food Approach

The objective of this research was to evaluate the physicochemical quality, bioactive compound content, and antioxidant capacity of pasta made with durum wheat semolina and partial substitutions of parota flour (Enterolobium cyclocarpum). Fettuccine pasta formulations were prepared with different percentages of parota flour (0%, 10%, 30%, and 50%). The methodologies included proximate chemical composition analysis, dietary fiber determination, total phenolic content, antioxidant capacity (ABTS assay), and reducing power, as well as cooking quality tests and color analysis. The results showed that the incorporation of parota flour significantly increased protein content (up to 22.06 g/100 g), total dietary fiber (up to 22.1 g/100 g), and total phenolic compounds (up to 23.35 mg/100 g). Additionally, higher antioxidant capacity and reducing power were observed in the pastas with higher parota flour content. In terms of cooking quality, the parota flour-enriched pastas exhibited reduced cooking time and higher cooking loss, but lower water absorption and weight of cooked pasta. The values for cooking loss and water absorption in cooked pasta suggest the need to optimize formulations in order to improve pasta quality. Color analysis revealed more reddish and yellowish tones with greater saturation. Parota flour enhances the nutritional and functional profile of the pasta, providing a healthier and more visually appealing product. These pastas enriched with parota flour show promise as functional foods by contributing to a balanced diet and encouraging the use of regional, sustainable ingredients. Full article

The control of bacterial plant diseases is very challenging and often relies on the application of copper compounds, although the frequent emergence and spread of resistant bacterial strains compromise their efficacy. Additionally, copper-based compounds raise environmental and human health concerns, leading to their inclusion in the European Commission’s list of candidates for substitution. As a promising and sustainable alternative, we investigated the efficacy of biogenic zinc oxide nanoparticles (ZnO-NPs) in protecting tomato plants against Pseudomonas syringae pv. tomato (Pst), the causal agent of bacterial speck disease. ZnO-NPs exhibited significant in vitro antibacterial activity (EC95 = 17.0 ± 1.1 ppm) against the pathogen. Furthermore, when applied to the foliage of tomato plants at 100 ppm before or following Pst inoculation, they induced significant reductions in symptom severity and bacterial growth in planta, which were comparable to those shown by plants treated with acibenzolar-S-methyl, a plant defense inducer. Gene expression assessed by qPCR revealed the involvement of the systemic acquired resistance (SAR) pathway in tomato plants treated with ZnO-NPs before inoculation, suggesting that the observed protection could be due to a priming effect. Finally, infected plants showed oxidative stress, with higher H2O2 and malondialdehyde (MDA) contents. ZnO-NPs reverted this effect, containing the content of the above molecules, and stimulated the production of metabolites involved in dealing with oxidative perturbations (carotenoids and phenols), while unaffecting flavonoids and anthocyanins.
