Dear Colleagues,
Phenols and polyphenols are a class of plant secondary metabolites recently drawing particular interest due to their broad spectrum of pharmacological effects. The identification of these bioactive molecules occurring in food and natural products is a difficult task because of the large number of components and complexity of their structures. From a chemical viewpoint, they can be classified into different groups, such as phenolic acids, flavan-3-ols, flavanones, flavones, flavonoids, and lignans. The most common separation techniques used for their determination are capillary electrophoresis, gas chromatography, liquid chromatography, and, lately, supercritical fluid chromatography. Additionally, the combination of any chromatography technique with mass spectrometry has come to play an influential role by allowing the relatively fast tentative identification and accurate quantification of polyphenolic compounds at trace levels in vegetable media.
The second edition of the Special Issue also aims to collect papers dealing with the determination of bioactive phenolic and polyphenolic compounds in food and natural products; in addition, a particular focus on new achievements in the field will be appreciated.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
