Dear Colleagues,
Consumers want novel functional ingredients to replace conventionally used synthetic additives and to improve the bioavailability of health-beneficial compounds. There has been increasing interest in exploiting the combined advantages of proteins and polysaccharides as functional ingredients via the development of protein–polysaccharide complexes as delivery vehicles to encapsulate bioactive compounds. Although proteins and polysaccharides are present in our foods, it is necessary to reassemble them with different combinations and processes in order to develop delivery vehicles with the desired properties. Studies are needed to address the physical problems associated with the formation of protein–polysaccharide complexes and phase behavior that results from aggregation of such complexes. Further, a well-designed, controlled assembly of nanoparticles of protein–polysaccharide complexes under target physicochemical and physiological conditions is vital to overcome the technical challenges associated with incorporation of active ingredients into commercial foods and beverages.
We invite both original research and review articles related to food proteins and polysaccharide complexes as delivery vehicles to encapsulate bioactive compounds. We particularly welcome the submission of manuscripts dealing with food proteins and polysaccharide nanoparticle and microparticle delivery systems to encapsulate active ingredients designed to improve food quality and safety, and human health and wellbeing, such as flavors, colors, antioxidants, enzymes, antimicrobials, bioactive lipids, vitamins, minerals, and nutraceuticals.

Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
