Special Issue Information

Dear Colleagues,

Mycotoxins are among the most significant natural contaminants affecting foods and feeds, representing a persistent threat to food safety, public health, and global trade. These toxic secondary metabolites, produced by various filamentous fungi, can contaminate raw agricultural commodities as well as processed foods and often exhibit resistance to conventional processing techniques. Climate change, globalization of food supply chains, and evolving agricultural and storage practices further exacerbate the complexity of mycotoxin contamination scenarios and consumer exposure.

The effective management of mycotoxin risk requires an integrated approach encompassing reliable detection methods, preventive strategies throughout the food chain, and efficient detoxification or mitigation techniques. In recent years, substantial advances in analytical chemistry, biotechnology, and food processing have enabled more sensitive, selective, and rapid detection of mycotoxins, while also supporting the development of innovative strategies to prevent contamination and reduce toxin levels in foods.

This Special Issue aims to bring together high-quality original research articles and reviews addressing the latest scientific developments in the Detection, Prevention, and Detoxification of Mycotoxins in Foods.

We welcome contributions that cover, but are not limited to, innovative analytical methodologies, such as high-resolution mass spectrometry, rapid screening tools, and biosensors, for monitoring mycotoxins, including emerging and modified forms. Furthermore, studies focusing on preventive measures at pre-harvest, harvest, and post-harvest stages, as well as physical, chemical, and biological detoxification approaches, including enzymatic degradation, microbial binding, and novel food processing technologies, are particularly encouraged.

By integrating multidisciplinary perspectives from food chemistry, microbiology, toxicology, and food processing, this Special Issue aims to provide updated knowledge and practical solutions to support risk mitigation strategies, enhance food safety, and protect consumer health. The collected contributions will serve as a valuable resource for researchers, regulators, and stakeholders involved in controlling mycotoxin contamination in the food system.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
