Special Issue Information
Dear Colleagues,
The increasing production of toxins around the world and their presence in food is of great concern to consumers. These toxins can be very diverse, as are the toxic effects they have on organisms. This Special Issue aims to promote a deeper understanding of toxin action at the cellular and genetic levels, illuminating the intricate molecular pathways through which foodborne toxins induce different pathologies. For the present Special Issue, we invite submissions that delve into the following topics:
Cellular and genetic responses: Studies focusing on elucidating the complex biological responses to toxin exposure, including signalling pathways, gene expression changes, and metabolic disruptions. In particular, studies employing advanced methodologies, such as genomics, proteomics, metabolomics, are encouraged.
Novel analytical techniques: Pioneering methods for the sensitive and specific detection of toxins in different food matrices.
Processing impacts: Research focused on the influence of food processing on the formation, degradation, and mitigation of toxins.
This Special Issue welcomes original scientific articles and quality review articles related to the identification and characterization of hazards arising from exposure to toxins in food which aim to achieve accurate risk assessments regarding human health.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
