Dear Colleagues,
Risk assessment is a scientific process that involves hazard identification, hazard characterization, exposure assessment, and risk characterization. When conducted properly, this process allows for the classification or quantification of risks of certain diseases transmitted by microorganisms in certain foods. Currently, given the large number of well-known and novel foods, risk assessments require robust microbiological surveillance covering traditional and emerging food pathogens. At the same time, advancements in bioinformatics have provided unprecedented insights into microorganisms, allowing for more accurate risk estimation than ever before. This Special Issue aims to encourage the publication of studies focused on risk assessment and microbiological surveillance, as well as studies utilizing bioinformatics tools to combat foodborne pathogens. We invite researchers to submit studies on risk assessments of food microorganisms and their toxins, human exposure to microbiological agents, or the qualitative and quantitative identification of risks involving foodborne pathogens and other food hazards. In addition, this Special Issue is interested in studies that apply bioinformatics to the control of food pathogens.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
