Dear Colleagues,
The increasing prevalence of food allergies and intolerances, along with growing consumer expectations for safe and sustainable food, presents major challenges for modern food systems. Innovative biotechnological approaches are increasingly being explored to improve food safety, reduce allergenic potential, and develop food products that are accessible to a wider range of consumers. This Special Issue of Foods aims to highlight the recent advances in biotechnology supporting the development of safer and more sustainable food systems. The focus will be on strategies for managing food allergens, intolerances, and detecting biological and chemical hazards. We invite researchers to submit original research articles, reviews, and short communications covering topics such as the use of biotechnology to reduce or eliminate allergenic proteins, fermentation and enzymatic approaches to improve food digestibility, innovative detection methods for allergens and contaminants, and the development of novel or alternative food products with improved safety profiles. Contributions addressing molecular, analytical, technological, and processing aspects of allergen management are also welcome. This Special Issue seeks to bring together interdisciplinary research that advances current knowledge and promotes innovative solutions for safer, healthier, and more sustainable food systems.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.

Submitted papers should be well formatted and use good English. Authors may use MDPI's English editing service prior to publication or during author revisions.
