Special Issue Information
Dear Colleagues,
Mycotoxins remain a major food safety concern worldwide, posing significant risks to human and animal health and causing substantial economic losses in the food and feed chains. For sustainable food systems, the assessment and management of mycotoxin risk face new challenges linked to climate change, evolving agricultural practices, circular economy strategies, and the increased valorization of agri-food by-products. These factors may alter fungal ecology, contamination patterns, and consumer exposure, requiring updated and integrative risk assessment approaches.
This Special Issue will provide a comprehensive overview of current advances in the risk assessment of mycotoxins within sustainable food systems, covering the entire farm-to-fork continuum. Contributions are welcomed on topics including, but not limited to, the occurrence and co-occurrence of mycotoxins, exposure assessment, toxicological interactions, mitigation and detoxification strategies, innovative analytical and biomonitoring tools, and the impact of sustainable practices on mycotoxin dynamics. Particular attention is paid to the integration of risk assessment with risk management strategies supporting food safety, environmental sustainability, and economic resilience. By bringing together experimental, modeling, and regulatory perspectives, this Special Issue will support science-based decision-making and promote safer and more sustainable food systems.

Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
