Special Issue Information

The food sector is currently facing new challenges driven by the demands of increasingly health-conscious, sustainability-oriented, and innovation-seeking consumers. The use of novel raw materials—such as agro-industrial by-products, alternative plant-based sources, and bioactive ingredients—offers a concrete opportunity to enhance the nutritional profile of food products while reducing the environmental impact across the supply chain. At the same time, emerging technologies make it possible to process food matrices without compromising their nutritional and functional quality, opening up new perspectives in terms of safety, stability, and sensory performance. The aim of this Special Issue is to identify effective synergies between innovative ingredients and enabling technologies, with the goal of developing functional foods that meet modern nutritional needs without sacrificing taste and acceptability. The interdisciplinary approach proposed in this Special Issue represents a strategic lever to support the transition towards more sustainable, personalized, and health-oriented food systems.

Manuscript Submission Information

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 100 words) can be sent to the Editorial Office for announcement on this website.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Applied Sciences is an international peer-reviewed open access semimonthly journal published by MDPI.
