Cover Story: Exopolysaccharides are biopolymers obtained from microorganisms; they could be fully valorized to obtain nanostructured devices for tissue engineering. Porous structures are the ultimate product of the sol–gel route, whose final step is the removal of the liquid phase from the polymeric network (drying). This review aims at pointing out the differences between drying techniques to pin the most effective route to obtain exopolysaccharide-based porous devices of biomedical interest. Supercritical CO2 drying (which produces aerogels) is the main technique that preserves gels’ nanostructure, thus forming a bridge between morphology and biomechanical performances, which is crucial for biomedical applications.
