Cover Story: Opuntia macrorhiza (OM), known as red prickly pear, is rich in polyphenols, ascorbic acid, and betalains. The fruit peels exhibit antioxidant, antifungal, and antibacterial activities. This study aims to optimize ultrasound probe-assisted extraction (UPAE) parameters to maximize the yield of bioactive compounds from OM fruits (pulps and peels) and assess their antioxidant activities using the Taguchi design. Optimal conditions for OM pulp were aqueous extraction for 12 min with a 60 mL/g ratio and 48 pulses/min, and, for OM peels, 20 min with the same ratio and pulsation. UPAE showed higher yields than stirring extraction (STE), with total polyphenol content ranging from 10.27 to 13.07 mg gallic acid equivalents/g dry weight and betalain content from 974 to 1099 μg/g dry weight. These fruits have the potential for food and medicinal uses due to their health benefits and lack of toxicity. View this paper
