Dear Colleagues,
It is a great pleasure to introduce this Special Issue of Polymers, entitled “Valorization of Biopolymers from the Food Industry”. The increased awareness of our environmental impact has encouraged novel uses of different discarded materials, thus establishing a hot topic in today’s research. Food raw materials and processing wastes are gaining value as abundant, relatively cheap, renewable, and innovative sources of various compounds with added-value potential. The determination of their valorization strategy relies on the compositional complexity of these materials, the technologies that enable efficient and environmentally friendly processes, and the confirmation of added value, making this research area both exciting and challenging. This Special Issue will focus on biopolymers—such as carbohydrates and proteins—and phenolics—such as lignin and tannins. Particular attention will be paid to the recovery or production of biopolymers and phenolics from food industry waste streams, as well as their characterization, added value evaluation, and, if applicable, further applications. Emphasis will also be placed on the food industry, biotechnology, and the pharmaceutical industry. We are also seeking papers on the development of novel technologies and characterization methods in this area. To help advance this interesting and trending research area, we cordially invite you to contribute to this Special Issue with original research or comprehensive review articles.

All manuscripts are thoroughly refereed through a single-blind peer-review process. Polymers is an international peer-reviewed open access semimonthly journal published by MDPI.
