Dear Colleagues,
Medicinal plants and aromatic and wild herbs, in their different parts (roots, stems, flowers, seeds, etc.), have been used since ancient times not only as flavouring additives and food preservatives but also for the active ingredients contained therein; they are the cornerstones of traditional medicine and ethnomedicine. Volatile compounds such as terpenoids of essential oils, or secondary non-volatile metabolites extractable from the different parts such as flavonoids, limonoids, triterpenoids, alkaloids, and polyphenols have shown over the years different antioxidant, protective, antimicrobial, antiproliferative, and anti-inflammatory effects. The growing concern about antibiotic resistance, as well as the scepticism of the world population towards the use of synthetic substances within the food supply chain and the growing attention to the use of secondary metabolites to achieve a good lifestyle, has increasingly strengthened the importance of scientific opinion towards natural products. Based on countless scientific studies, plant extracts such as essential oils or non-volatile extracts could help in terms of reducing microbial effects, safety, preservation of the food product, protection against foreign agents such as metals, and antioxidant power on human health. Therefore, the purpose of this topic is to provide readers with a wide range of innovative scientific articles or original reviews, highlighting developments with respect to the past and stressing biological and chemical advances in the application of plant extracts and essential oils as medical and protective agents.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Plants is an international peer-reviewed open access semimonthly journal published by MDPI.
