Natural Antioxidants in Foods and Medicinal Plants

Special Issue Information
Dear Colleagues,
Antioxidant activity is a very important determinant of food quality. The content of compounds such as polyphenols, carotenoids, organic acids, and vitamins determines antioxidant activity and affects our development and wellbeing.
At present, consumers are more aware than ever before, and want to know what nutrients their food contains and what effects the consumed food causes. Medicinal plants with a high content of pro-health ingredients represent an important factor enriching our diet.
The articles of interest to us concern the antioxidant activity and content of bioactive compounds in foods and medicinal plants.
Potential topics include, but are not limited to, the following:
- Comparison of the antioxidant activity of different food products (fresh and processed ).
- Comparison of the antioxidant activity of vegetable raw materials and medicinal plants grown with the use of various agrotechnical factors.
- Linking the content of bioactive compounds with antioxidant activity.
Influence of the antioxidant activity and bioactive substances of vegetable raw materials and medicinal plants on human health.
