Dear Colleagues,
Phytochemicals are key components that determine the quality of food and characterize plants, influencing their antioxidant and anti-inflammatory properties. The content of compounds such as anthocyanins, carotenoids, polyphenols, flavonoids, isoprenoids, and glucosinolates influences our health and well-being. Consumers are increasingly aware and want to know what ingredients are in their food, what edible plants contain, and how they affect their bodies. They want to understand the properties of bioactive compounds and their antioxidant and anti-inflammatory properties. More and more consumers are choosing functional foods that improve body function. Therefore, knowledge about the composition of raw materials and food additives, as well as their antioxidant and anti-inflammatory properties, is crucial. The articles in this Special Issue focus on the content of bioactive compounds and the antioxidant and anti-inflammatory effects of raw materials, additives, and plant products.
Potential topics are as follows: comparison of the content of bioactive compounds and antioxidant and anti-inflammatory activity in various raw materials and food products; possibilities of using plant extracts to increase antioxidant and anti-inflammatory activity; the relationship between bioactive compound content and their antioxidant and anti-inflammatory activity.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Molecules is an international peer-reviewed open access semimonthly journal published by MDPI.
