Special Issue Information

The term “food safety” is used to describe food that is free of harmful substances, particularly chemical pesticides, fertilizers, antibiotics, microbial contamination, and toxic microbial metabolites. Currently, there are no universal methods to achieve food safety and therefore research into the development of new procedures is required.

One such food treatment method, nonthermal plasma (NTP), has significant microbicidal effects on various microorganisms, such as viruses, bacteria, yeasts, and micromycetes while causing minimal damage to the quality of processed food or packaging materials. In addition, other food-safety-related effects such as decomposition of volatile organic compounds and mycotoxins have been reported.

This Special Issue of Foods will present a collection of original studies or reviews on plasma–food interactions as well as works dealing with the relevant apparatuses designed for practical applications. Our aim is to present knowledge that moves us closer to the application of NTP in the food industry.

Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
