Special Issue Information
Dear Colleagues,
The presence of trace elements in foodstuffs may either contribute to daily mineral intake or pose a toxicological risk. Although these elements typically occur at low concentrations (µg kg−1), their biological impact is influenced by their occurrence, bioavailability, and chemical speciation, which determine whether their effects on human health are beneficial or adverse. Furthermore, food components undergo biotransformation processes after ingestion, and current bioavailability studies are essential for enhancing the accuracy of both exposure and risk assessment.
This Special Issue, entitled “Trace Elements in Plant-Based and Novel Foods”, welcomes the submission of original research articles and systematic reviews related to the occurrence of trace elements in plant-based foods, alternative proteins, and novel foods, including studies on bioaccessibility and bioavailability, food safety and food quality, and exposure and risk assessment.

Manuscript Submission Information
Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Manuscripts can be submitted until the deadline. All submissions that pass pre-check are peer-reviewed. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
