Dear Colleagues,
The contamination of food with harmful microorganisms has always been a significant topic in the field of food safety research. With the diversification of the environment and the globalization of the food industry, the problem of pathogen toxins and antibiotic resistance has become an increasingly serious public health challenge worldwide. The rapid identification, detection, analysis and control of microbial hazards is a pressing issue in this field. This is of great significance for the effective control of the spread of foodborne pathogens in the food chain.
This Special Issue of “Research on Harmful Microorganisms and Their Toxins and Antibiotic Resistance in Food: Detection, Analysis, and Control” aims to include original research papers and reviews focusing on the identification, detection and control of harmful factors in food microorganisms. The focus covers the cross-fertilization of innovative technological tools such as multi-omics coupling (e.g., transcriptomics, metabolomics, odoromics), molecular diagnostics, next-generation sequencing, biosensors (e.g., electrochemical sensor), artificial intelligence (e.g., machine learning, molecular docking), etc., with traditional methods. The journal will focus on new methods and theories related to the identification, detection and control of foodborne pathogens, their toxins, signaling molecules and drug resistance mechanisms. Research topics closely related to the theme of this Special Issue are also welcome.

Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
