Dear Colleagues,
Food transformation processes are central to securing nutritional integrity, sensory attributes, and consumer trust within modern food systems. Advances in molecular characterization, structural analysis, and predictive modelling have revealed the underlying interactions between biomolecules, microorganisms, and processing conditions that govern product performance over time. Unravelling these interactions not only deepens our fundamental understanding but also provides pathways to optimize stability, minimize waste, and support the development of resilient, health-oriented foods. Emerging approaches—ranging from omics-based profiling to smart packaging technologies—offer powerful tools to monitor and modulate dynamic changes occurring from production to consumption. This Special Issue seeks to bridge fundamental and applied perspectives, fostering an integrated dialogue across disciplines to inspire innovative strategies for the food sector. By connecting science, technology, and sustainability, we aim to build a platform that supports both academic advancement and industrial practice.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
