Special Issue Information

Dear Colleagues,

The escalating global demand for food and agricultural products, coupled with rising quality expectations, has driven the need for advanced food processing and detection technologies. While innovative methodologies—including the numerical optimization of food processing, spectral imaging, and sensor networks—demonstrate potential for enhancing productivity and reducing waste, persistent challenges remain in their scalability, cost-effectiveness, and operational robustness. Future research should prioritize the simplification of system complexity and the improvement of deployability in commercial production environments.

This Special Issue seeks original research on advanced processing technologies enhancing food quality, as well as novel analytical methods and chemometric approaches for safety monitoring and quality assessment. Contributions may include (but are not limited to) the following: emerging food processing techniques for quality improvement; innovative detection strategies and data analysis methods for safety inspection; and predictive modeling, process control, optimization, and AI/ML applications in food systems. The research articles in this Special Issue will cover various non-destructive quality evaluation methods and processing technologies and equipment for enhanced food quality such as near-infrared spectroscopy and machine vision technologies. All article types, including original research, opinion, and review articles, are welcome.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
