Special Issue Information

Dear Colleagues,

Advances in food science and biotechnology are driving the development of innovative delivery systems that enhance the stability, bioavailability, and targeted release capabilities of functional ingredients and probiotics. This Special Issue invites original research papers focusing on controlled and targeted delivery within food systems, encompassing theoretical mechanisms, material design, and applied technologies. Areas of interest encompass nano/micron-scale encapsulation techniques, smart release mechanisms, biopolymer carriers, gastrointestinal targeted delivery, and translational applications of delivery systems. Research integrating process optimisation and functional efficacy assessment in real food matrices is particularly encouraged. This Special Issue aims to advance the development of functional foods with precise health benefits by exploring theoretical foundations and expanding practical applications.

Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-blind peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
