Dear Colleagues,
This Special Issue of Food focuses on the rapidly evolving field of fortified functional foods. With current trends emphasizing the use of "food as medicine," there is an urgent need to explore novel fortified foods and snacks designed to combat nutritional deficiencies, boost immune function, and promote healthy aging. These products must combine the benefits of traditional fortification—the addition of essential vitamins and minerals to prevent deficiencies—with functional ingredients such as probiotics, bioactive compounds, and antioxidants that offer health benefits beyond basic nutrition.
This Special Issue aims to compile cutting-edge research and reviews highlighting recent developments toward more targeted, technologically advanced, and sustainable methods of obtaining novel functional foods. Covered topics include the characterization and extraction of bioactive compounds, fortification, precision nutrition, and nanotechnology to improve the bioavailability and stability of nutrients.

Manuscripts should be submitted online at www.mdpi.com by registering and logging in to this website. Once you are registered, click here to go to the submission form. Accepted papers will be published continuously in the journal (as soon as accepted) and will be listed together on the special issue website. Research articles, review articles as well as short communications are invited. For planned papers, a title and short abstract (about 250 words) can be sent to the Editorial Office for assessment.
Submitted manuscripts should not have been published previously, nor be under consideration for publication elsewhere (except conference proceedings papers). All manuscripts are thoroughly refereed through a single-anonymized peer-review process. Foods is an international peer-reviewed open access semimonthly journal published by MDPI.
