Dear Colleagues,

This joint Special Issue, between Foods and the International Journal of Molecular Sciences, focuses on the cutting-edge advancements in advanced bioprocessing and functional evaluation of edible plants, aiming to bridge the gap between the enhancement of bioactive ingredients, their underlying molecular regulatory mechanisms  and practical health-promoting applications, while aligning with the core scopes of both journals. It serves as a high-quality academic platform to guide scholars in exploring innovative bioprocessing technologies, evaluation methods and practical applications in this field.

Key topics and the scope of submissions include:

  1. Optimized extraction and purification technologies, targeted enzymatic hydrolysis, probiotic fermentation and synthetic biology approaches for bioactive component enrichment and structural modification.
  2. Molecular mechanisms underlying the health benefits of edible plant-derived bioactive ingredients, including molecular docking, gene expression regulation, signal pathway analysis, metabolomic and transcriptomic studies and molecular interactions between bioactive components and biological targets (e.g., enzymes, receptors and nucleic acids).
  3. Functional evaluation methodologies such as in vitro antioxidant/antimicrobial tests, cell permeability assays, molecular docking, pharmacokinetic simulation and in vivo animal experiments to validate the health benefits of processed edible plants and their derived products.
  4. The development, formulation and safety assessment of functional products derived from edible plants.

We warmly welcome original research articles, review papers and short communications that advance sustainable bioprocessing technologies, clarify the structure–function relationships and molecular mechanisms of bioactive ingredients from edible plants and promote the industrial translation of edible plant-based functional products.
